I just took the pup for a walk, and I passed a house that was blasting James Taylor from their deck. They were playing the song “Mexico” – which is appropriate because we had Mexican food tonight!
I found this recipe somewhere online, I can’t remember where. So – if you are reading this and it’s your recipe, let me know, I would love to give you credit. It made for a very pretty dish.
The chicken wasn’t as flavorful as I would have liked, but I think that was because I poached it first, then added it to the pan just to sear in the chili powder and cumin that I dredged it in. Next time I will probably just cook it in the saute pan the whole time. Overall, it was very filling and had a nice kick from the green chilies.
