Tuna Melt Nachos

I found a recipe in Everyday with Rachael Ray (the magazine) that was very similar to the lunch I had today – however I adapted it to suit myself. You can find the exact recipe here.

I started by putting some pita chips and cheddar cheese in the oven at 35o degrees for 2-3 minutes to melt the cheese. I love Stacy’s chips. They are the perfect salty/crunchy mix.

While the cheese was melting, I made the tuna salad tuna salad

Then I just dotted the chips/cheese with the tuna salad and sprinkled them all with chili powder.  Easy, peasy, lemon squeezy!

I usually just have leftovers for lunch, or scrounge (that is what Meeker and I call snacking on whatever we can find that is already made) – so this was a very nice mid-day treat. It was so easy, I will definitely make it again!
