Still loving those leftover roasted vegetables. Here is what I did with them for lunch…

This was so good – I was completely satisfied eating just half.

In the sandwich: spicy mustard, smear of cream cheese, spinach, tinsy bit of pepper jack cheese, veggies (obvi.), salt and pepper. Put into the panini press for 3-4 minutes….melty goodness. Plus that plum in the background was so super tart and perfect.

Plus this little gem for dessert…
