We got to sleep in a little this morning, and then jumped out of bed, realizing that we we wanted to go to early church so we could have a nice full day in Boulder.
After feeding the farm (cats, dog)…I made myself 2 eggs and a piece of toast. However, after cooking, I realized I wasn’t that hungry so I gave some to Meeker. This is what my plate ended up looking like.
I ate most of the toast on the right with the PB on it. The half of the toast under the egg was mostly for “sopping” purposes…soak up the yolk. It was a good breakfast but I was super full afterwards and kind of wished I didn’t have so much.
But, the hunger was back after church, so we came home for another breakfast (or I guess, brunch). I used the leftover chicken from my salad at dinner last night to make another yum-yum salad.
Are you sick of looking at pictures of salads? (too bad…I am so not sick of eating them.) This one was particularly good. I had the chicken from last night’s salad that still had some ceasar dressing on it, and then I added my own lettuce with some vinegarette dressing…the combo was delish.
With that, we are off to Boulder…land of the beautiful scenery and good restaurants. Adios and vaya con Dios.
