My favorite morning radio show always makes a big hoop-la about “finally Friday”, and during the summer, I forgot what it is like to really look forward to the weekend – whooohoo! After this busy, busy week, I could not be more ready.

I started off the weekend with this shrimp/pasta dish.

It was ww pasta, zucchini, yellow squash, shrimp and a bechamel sauce to which I added tomatoes. Here is the exact recipe.

I was worried about using the shrimp because last time I cooked with the little boogers – I made a kind of disgusting/weird thing that I didn’t like, and the leftovers sat in the fridge for over 2 weeks. Icky.

Tonight’s dish, however, was phenom. The flavors meshed so well together and it wasn’t too filling, but very satisfying. Meeker didn’t like the yellow squash – said they tasted like raw pumpkins – but I was a fan of the entire thing.

1/2 cup espresso gelato, chopped almonds, and chocolate chips. Oh so tasty.

I am hoping that the espresso will give me that little extra kick to make it through our Friday-midnight walk. We’re off to enjoy this August night!
