cookie disaster

I woke up this morning, so excited to bake a batch of cookies. My family is having a picnic this afternoon to celebrate my older brother’s birthday. After taking a bike ride with the puppy (and falling off my bike 2 times because of her pulling) I was at the store at 8am, getting cookie supplies to make a very promising batch of “Trail Mix Cookies” – a recipe I found in my latest issue of BON APPETIT.

Here is the dough, ready for the hot box:

Uh, this is not what cookies are supposed to look like. Maybe you can’t tell from this picture, but in reality they look like flat, crunchy pancakes with little bits of trail mix sticking out. I couldn’t even get them off the pan without breaking them apart. Oh so disappointed.

But, instead of letting these cookies get the best of me, I decided not to waste all the good trail mix inside and just store them to use as oatmeal/yogurt/ice cream toppings:

With the second/third batch, I froze the dough before cooking, and they came out slightly better. Slightly. The good news is that they are still tasty – albeit ugly.

Okay now backtrack a little, and here is my delicious dinner from last night:

Ingredients: carrots, cucumber, red pepper, green pepper, 2 tbs. muenster cheese, 2 tbs. wheatberries.

I actually had two bowls of this, but the 2nd one came topped with a veggie burger, shredded instead of chopped carrots, and no wheatberries.

I love vegetables so much.

Alright, it’s off to church, and then down to Colorado Springs for a picnic.

    Kathryn!! That SAME exact thing happened to me when I made those cookies! I think my baking soda/powder might’ve been old. Such a bummer but LOVE the idea of turning them into toppings :)
