frozen fruit and oats

I really liked my food organization on Monday – so I tried to replicate it for Wednesday. Before I went to bed last night I made some overnight oats.

Night-Before Ingredients:

  • 1/3 cup oats
  • 1/3 cup plain yogurt
  • 1/3 cup vanilla soy milk
  • 3-4 frozen strawberries

This Morning’s Additions:

  • fresh blueberries
  • spoonful of peanut butter
  • almonds
  • cinnamon

Turned into this lovely bowl of mush…

The frozen fruit didn’t add quite as much flavor as I had anticipated/hoped. The morning additions were the best part – I don’t know what I would do without PB and cinnamon.

All in all, it was a filling breakfast that will definitely get me down the road. Have a fantastic Wednesday!
