This afternoon, I drove down to Colorado Springs to have lunch with a very dear friend named Tracy who I have known since elementary school! She lives in Connecticut, but she is staying in CO with her parents while she recovers from brain surgery that she had 2 weeks ago (to remove a tumor) . I guess I was expecting her to look tired and weak…or something. But she was her adorable, bubbly ole self and we had a fantastic lunch at a favorite restaurant!

The restaurant is a fun little place called The Olive Branch (not to be confused with the Olive Garden, which I also love)

When you sit down, they bring these warm, orange bread slices with a pad of better that is all melty on top

Mmmm. It was so citrus-y and sweet and satisfying. I picked at this and finished most of it by the end of the meal
For my entree, I ordered the Famous Olive Branch Salad and soup.

Fresh mushrooms, mandarin oranges, alfalfa sprouts, black olives and sunflower seeds. Served with yogadill dressing.
So darn delicious. It isn’t called “famous” for nothing.

The soup of the day was a chicken chowder with wild rice

I was a little surprised by how thick this was. Almost the consistency of oatmeal. But it was so savory and satisfying. I ate about half and felt that was enough. The thing that I really like about rich foods like this is that I don’t have to fill up to feel satisfied. This was the perfect lunch.
It was so good to see Tracy in person and see how well she is recovering. I think she is so amazing and has the best attitude of anyone I know! I love you, lady.
