veggies and chalk

Such a relaxing Sunday…just what I needed. I had seen a very enticing cookie recipe on Caitsplate for some Whole Wheat Pumpkin Chocolate Chip Cookies. I just happened to have all of the ingredients, and an afternoon with no plans…so away I baked.

So cool and only $10! I am definitely going to be giving this a try. Stirring peanut butter is something I hate. Without fail, I get the excess oil all over the counter/my hand.

Then Meeker and I decided to find a movie on instant Netflix to watch. We agreed on a movie called Chalk. It was a “mock”umentary about high school teachers and I LOVED it. Some of it was a little too close to home for me to laugh at, but overall – it was hilarious and a really good movie. Anyone who went to high school (or anyone who is a teacher of any grade) will enjoy it.

While watching the movie, I made/ate a bowl of my favorite things on Earth:

Roasted vegetables. Drooool.

On a large baking sheet I put the ingredients below and and roasted them for 30 minutes @450 degrees (stirring halfway through)

  • 3 zucchini
  • 1 yellow squash
  • 2 carrots
  • handful of cherry tomatoes
  • evoo
  • salt/pepper
  • garlic powder
  • cumin

When they came out of the oven, I put some lemon juice, plain yogurt, and a little chicken (on the side) topped with chopped almonds. It was so dang good. The combination of these tastes is so comforting and satisfying to me. The ultimate comfort food.

I also made enough for leftover lunch tomorrow. Score. Now I am off to have a cookie and get my stuff set for another week or escuela.
