The intervals were not even a fraction of the pain and agony that I expected them to be. In fact – I enjoyed them immensely. Surprise, surprise. Also, it started raining on the last lap of my last 1600. How perfect. So my last kick on the track + my jog home were enjoyed in the rain. I loved it so much. Don’t you just love it when you have a good workout?
I came home – not hungry in the slightest. But an hour or so later, I wanted something comforting. The most comforting thing in the world to me is a big bowl of pureed veggies. We had broccoli in the drawer.
I steamed 2 big heads of broccoli in the micro – just until they were tender. Then roughly chopped and dropped into the blender, added a 2 – 3 cups of water and set on high.
Blender o’ greens.
After it was all pureed, I salted to taste and added about a half cup of milk. So wonderfully satisfying.
Made even better with some mozzarella cheese on top.
Then I got a little crazy and threw some leftover chicken on top – which turned to be a mistake. I don’t know if the chicken was turning…but it was icky and I ate ½ a bite and discarded it immediately.
Usually, pureed broccoli is my fave – but this was a teensy bit bitter. Although, I still loved it. Another favorite is cauliflower. Acorn squash, butternut squash, the list goes on and on.
I just glanced at my computer clock and cannot believe that it is 9:03pm. I try to be in bed by 9:45ish – and that is not looking like it is possible tonight. Parent teacher conferences are tomorrow and Thursday and I still have some worky work to do for them. I think I will have a cookie to get me through the next hour. (Smile!)
