I can’t believe it is already Thursday – this week has flown by! This morning, I have to go into work early because I actually have a conference before school, and then about 12 after school.
So, I will be brief. A repeat breakfast – but a good one. Something to get me “down the road” as my mom used to say.
Hallelujah this was goooood.
Egg sandwich: mozzarella melted on top, and salsa. Bread toasted under the broiler – so the outside is crispy and wonderful, the inside of the bread is still soft. Mmmm.

What kind of bread is that? I love when you can see the actual seeds on the outside like that!
The bread is actually just a whole wheat “generic” brand from a grocery store we have here called Sprouts…I agree – I love it when you can see the seeds too!

I love the idea of heating the bread under the broiler so that only one side gets crispy. It’s genius! I’m trying that next time I make an egg sandwich.

You used to have a cup of ramen noodles to get you down the road when we walked to school! how long ago was that?!
OMGosh! I loved the way the steam would rise from the cup o noods and then blow in my face and keep me warm. What a good memory! Geez, like 15 years ago!?!? I can’t even believe I have lived long enough to make a reference to 15 years ago!!
