Yes, I want toast

I have been on a toast kick lately. So, this morning I had just that.

I started with a grapefruit

This was the perfect thing to wake my mouth up. Then I toasted a pita with some yummy Justin’s almond butter.

I love these squeeze packs – so convenient! Plus, it packs 7g of protein!

I put the Justin’s on first, and then popped it under the broiler for about 4-5 minutes. It got all crispy and wonderful:

Then we were off to church for an extremely good message about priorities and chaos and how a jam packed lifestyle has become so common place, and how the burnout rate is so high in many professions. I am as guilty as they come. I LOVE having a busy schedule, and while there is nothing wrong with that, this week I am planning to focus more on my relationships and less on my to-do list. Busy is easy. It’s like a treadmill. Simplicity and focus are difficult. It is important for me to take the time and expend the effort to slow down and be intentional about my relationships.

Okay, enough of the heavy stuff. When we returned home, I made myself an easy lunch.

Lettuce, cucumber, corn, garbanzo beans, bell peppers and ranch dressing.

Then I made some rockin’ baked sweet potato fries. I will post the recipe here.

The perfect spiciness for me. I ate about half of these and saved the rest for Meeker – who had Chef Boyardee for lunch and made himself sick. Kind of funny.

This afternoon I am off to Colorado Springs to visit my best friend (who lives in LA, but is visiting her parents for the weekend). I haven’t seen her in months and I am so excited! She is as much of a food-lover as I am, and we are sure to have an afternoon full of laughs. I am spending the night there, so I will report back tomorrow!

    Katie, I swear this message board was not here before!! I must be losing IT!! Fries look awesome, last time I made mine they turned out soggy, I cheated the next time and bought frozen from Sunflower or Sprouts..they were pretty tasty!! Have a great relaxing day!
