Mini Vacation
Posted: September 7, 2009 Filed under: Uncategorized 11 Comments »I just got back from my little trip to Colorado Springs (about an hour drive away from where I live) to see my best friend, Jocelyn, and her family. We had so much fun together. Sometimes I forget how much I enjoy just being with my friend, and how relaxing it can be to be around someone with whom I am so comfortable.
When I arrived at her parent’s house – her dad was already in the midst of cooking up a fantastic steak dinner for us! I hadn’t had steak in years and it was so satisfying. I could only eat about ½ of mine – but I loved it.
Plus, he grilled up a lot of veggies on my behalf – such good hosts.
It was such a good home cooked meal. After eating, we sat around the kitchen table and had good conversation and lots of laughs. Then THIS guy was pulled out of the freezer:
A pralines and cream ice cream cake!
Jocelyn and I immediately reached for the decorative pecans (which is why there are 4 missing in this picture). I love ice cream cake – and this was the perfect end to the already decadent meal. Yes, I want cake.
Then we spent the rest of the night playing Scategories with her parents and grandma. We had SUCH a blast – I forgot how much I love that game!! We laughed ourselves into tears on several occasions.
Then we headed downstairs and watched the movie 21 while lying in bed with her two adorable cocker spaniels – Ginger and Sugar. They were like little teddy bears.
When we woke up this morning, we decided we needed some movement, and went for a quick hike before my drive home.
My hometown is so beautiful! Look at that Colorado sky!!
On the way home I had a Soyjoy from the stash I got at A Taste of Colorado.
My first impression of this bar was that it was “dry” – but after a few bites I decided I really liked the berry flavor. Plus, it has held me over until now (11:30ish). So, I may have to keep these little bars around more often. Also, Jocelyn’s Mom gave me this exciting cookbook before I left.
I just browsed through it, but I have already flagged some recipes that I am so excited to try out! What a nice gift – thank you Mrs. Brown!
I am so happy that I have alllllllll day to relax with the Meekster! Happy Labor Day!

Scattergories was always my most fav game to play!!!!
