I came home to the house smelling like my grandmother’s on Thanksgiving. My sweet Meeker had slow-cooked a pork roast that been in the freezer for months. I tell you – it smelled just like my Grandmother’s house – I didn’t know we ever ate pork at Thanksgiving, but we MUST have – because it was undeniably the same smell.

He shredded the porky while I made some rice. Then I cut up a few veggies to add to the mix: 1 shredded carrot, 1 corn off the cob, 1 rib of celery, red wine vinegar. Plus some rice and pork.

(The rice is unusually WHITE because we bought a 25lb bag for the sole purpose of feeding the dog, but the budget is a little tight this month so we are eating it ourselves – more on that later).

Oh my goodness, you have no idea how good this bowl was. I couldn’t even talk during dinner.

What is it about slow cooked meat that is so gosh darn delicious?!

And a word on our budget: we have challenged ourselves (Partially out of necessity, and partially to prove a point to ourselves) to not go grocery shopping this week. We usually go every Monday and spend about $50. This may sound like a lot, but we don’t eat out at all (except for when family is kind enough to treat us) – and we love to eat – so $50 each week is what we spend. This week we are going for $0. We have plenty in the freezer/pantry – we just tend to gravitate to the fresh stuff and replenish each week. So – when you see the posts of some more unusual/creative eats this week – you will know why.
