Dial D for Dessert

Last night while watching some weird zombie movie called Fido (Meeker picked it from instant Netflix…he loves zombies…what a nerd) I made an oatmeal sundae (a la Sarah).
Best. Idea. Ever.

This is so good – it deserves its own recipe page, which I posted here. My favorite thing about this dessert was the combination of hot/cold textures. Gah – it’s unbelievable.
Meeker and I slept in this morning, and I awoke with a strong motivation to work out (level 3 of the shed) and clean. So that’s what I did. I realized at noon that I hadn’t eaten, so I made a pot of coffee and had several cups with vanilla soy milk and cinnamon (I’m kind of obsessed with that flavor combo lately…)

And two of these bad boys…

Crunchy and perfect.
Then I decided that I needed to reorganize and clean my kitchen cabinets. At 2:30, I was staaaharving and (again) realized I hadn’t eaten much, so I whipped up a hearty lunch.

This is ½ an acorn squash filled with turkey/veggie soup (minus the broth), topped with Munster cheese and popped under the broiler for a few minutes until the cheese looked bubbly and browned.
I used an upside down muffin tin to keep the squash from falling over (a trick I saw on RR). Worked like a charm.

I also had a square of Newman’s Espresso Chocolate.


I really liked this one…the texture was the key for me. I could taste the crunch of the espresso all mixed in the chocolate goodness. I usually prefer my chocolate a little darker (70% or so) but the crunch of the espresso bean added a nice sharp flavor that made up for that. Two thumbs up.
After showering, Meeker and I decided to go to “dinner” at a restaurant called The White Chocolate Grill.
Here was my dinner choice…

I might go as far as to say that this was life changing.
Words like delicious don’t even really begin to describe the wonderfulness of this white chocolate bread pudding. I’m a huge fan of bread pudding – and this one was over the top. So rich, caramel-y, sweet, creamy…every flavor was so defined and delicious. The white chocolate part of the dish was melted, and the whole thing was plopped down on top of it. The flavor was reminiscent of a pecan pie (the burnt sugar) and caramel – all encapsulated in a chewy, bread-y, lovely square of mush. It literally took me an hour to eat because I savored each and every tiny bite that I took.
Then we came home and watched Dial M for Murder (which I had never seen, and loved) in between answering the door and doling out candy to trick-or-treaters. Now it’s about 10:00, the doorbell rings are starting to become few and far between, and the day is winding down. A very good Halloween in my book!

Melting…
Posted: October 30, 2009 Filed under: Uncategorized 16 Comments »I woke up at 5:00 this morning, all ready to do the shred and go to work. Just to be sure, I looked our district’s website to check for a delay (that I was pretty sure wasn’t going to happen) and low and behold…another snow day. Really? This is a bit much. I’m all for a few days off of work, but because of fall break – I have only worked 2 out of the last 12 days. I’m a little tired of sitting on my butt and watching TV. Plus, we had oodles of fun Halloween activities planned for today. C’est la vie.
I tried to go back to sleep – but no luck, so I made coffee and ate one of the pastries I made last night.
I usually like my coffee black – but I was feeling the milk this morning. I also added cinnamon. It was yummy.
Then I shoveled the driveway and sidewalk (I like to think of it as my 2 hour workout) and took the doggels for a walk. We were slippin’ and slidin’ all over the place and I was really grateful that I didn’t have to drive on the skating-rink-like-streets to get to school. They hadn’t even plowed our roads at this point.
I got back about 9:30 and asked Meeker if he thought it was too early for lunch. He assured me that it wasn’t.
A tuna melt, of sorts. This was a ww pita, with tuna and cheddar cheese, popped under the broiler for about 5 minutes. It was fairly tasty…it was missing something but I couldn’t put my finger on it.
With nothing else to do at this point, I went back to bed and read for a while before falling asleep.
When I woke up, the sun was shining (!!!), so I took the puppy for another walk. When we got back around 1:30 – I was hungry again.
½ a cucumber, 1 carrot, a few grilled artichokes (from a jar) and lots-o-hummus. Such a good snack.
At about 4pm, the snow on the roads was rapidly melting – and Meeker and I decided to celebrate our freedom with a dinner out. At 4:00pm.
We went to a place called Mark Pi’s (they tell you when you walk in the door that it is pronounced like Mark Pees. Or you could think of it as peas if you are a bit more mature than I am) and I got the Miss Vietnamese Salad. It was enormous, and had tons of chicken, shrimp and veggies. I ate about ¾ before I was full. I had ordered this salad before, and it wasn’t as flavorful as I remembered.
A trip to Sprouts rounded out our rowdy Friday evening. I got a pound of steel cut oats, and I think I may have to make Senorita Sarah’s ice cream oats a little later this evening – considering I at dinner at 4pm.

‘Tis the season

But before we get to that, I tried a new drink that I got as a sample after my race a few weeks ago.

It claims to “control the appetite” – so I decided to give it a try when the mid-afternoon hunger struck. The stats aren’t bad…

It does have some weird ingredients, but it held me over until about 5:30 – tasted good, too.
After the “snack” wore-off, I made some good veggie/turkey soup. When it’s been snowing for 2 days straight, you’ve gotta make soup. Am I right?
This was my first soup of the season and it was so good.

I like to use ground turkey in soups – keeps me full – plus every veggie I can get my hands on. This particular soup included: onion, garlic, carrots, zucchini, tomatoes, green peppers and the white addition is hominy. I also added some Italian seasoning and about 4 cups of water. A good mix.

Here it is pre-cooking. After bringing it to a boil over high heat, I let it sit on low heat for about an hour.

Then I decided that it had been too long since I had made (or eaten) dessert…so I tried my hand at a recipe I saw on Rachael Ray. I didn’t have cranberries, and instead of store bought pie crust, I used pastry dough that I made a while ago and stored in the freezer. Other than that, I followed the recipe.


Oooh flaky pastry dough…I love you so much. This was delicious. I forgot how much I love baked apples. A great ending to a Thursday – my favorite day of the week. Now I’m off to watch The Office.

This was taken at 8am, after Meeker attempted to dig us out, and it has been snowing like crazy
all day long.
If you didn’t already guess…I had another snow day today! I can’t really believe it. Consecutive snow closures haven’t happened (to me) since I was a senior in high school…and that was in MARCH, this is still fall! I think we’re really in for it this winter…
We had so little food in our house that the only option for breakfast was squash.

I’m not complaining.

This is about ¼ of a butternut squash, chopped and cooked with a little butter in a sauté pan. I also added cinnamon, sage, and nutmeg – then drizzled the whole thing with maple syrup. It was divine.
Next, I did day 4 of the 30-Day-Shred (thank goodness for workout DVDs on days like this!!) and it kicked my butt (again). I may have started crying at one point.
While I was working out – Meeker pulled a chicken out of the refrigerator, and roasted it. It was beautiful.



We picked at the bird for a while, but then decided that we really needed to brave the storm for groceries- especially if this snow doesn’t let up soon. We didn’t want to be buried in our house with nothing to eat. So, we got in the car and…got stuck 5 seconds later. Luckily, I married a very strong boy, and he was able to push my car into movement both times that I thought we were going to have to abandon the car and hoof it the rest of the way.
We did make it to the grocery store and back and I only wanted one thing when we arrived home. Fruit.

That is one gala apple and a couple handfuls of pomegranate seeds with cinnamon and vanilla soy milk. Gah – this is so good. I will never be sick of it. I also had a toasted ww English muffin with butter on the side.

It is still snowing and blowing, and I can’t see an end in sight, so I am going to make something warm to drink, and curl up on the couch with my book.

SNOW DAY!!

I woke up at 5:00, looked out the window and thought… “no way” – there was hardly any snow. However, I checked anyway (hoping for a delay, at best)…and I found out the entire school district is closed. That’s wild.
I tried to go back to sleep, but was too giddy about the day, so Meeker and I got up and went for a winter wonderland walk in the wee morning hours.

While we were out…it really started snowing. The storm is here!
I know, I know…if you follow my blog, you have heard me express my disdain for cold weather on numerous occasions, but when it gets me a paid day off of work, I can’t really be upset.

To warm up…I made nice, strong coffee and a pumpkin baby-food-like breakfast.

Plus, Fig Newman’s.

- ½ cup plain yogurt
- ¼ cup pumpkin
- Heap of cinnamon (plus more for sprinkling on top)
- Maple syrup
Mix all together and throw it in the microwave for about 40 seconds. Then top with mini-chocolate chips (they melt better). Deliciousness.
Now I am off to do day 3 of the 30-Day-Shred. (Thanks for the challenge, Nat!)

Ignore the Irony
Posted: October 27, 2009 Filed under: Delish Dinners | Tags: balsamic vinegar, biggest loser, cauliflower, chicken 14 Comments »My breakfast pictures (a yummy yogurt mess) were awfully dark, and ugly. I forgot my camera at school so my lunch went unphotographed (cottage cheese, black beans, avocado…fantastic). Blogger fail.
What I can show you is my unbelievably good dinner.

Chicken: marinated in balsamic vinegar and spicy mustard. Cooked in a skillet.
Mashed potatoes cauliflower: the best, creamiest, most delicious thing ever.
Meeker even says they taste exactly like mashed ‘taters…and he is a true meat and potatoes guy. That’s a true testament.
To make them…
- Cook onions and cauliflower in a pan on the stove with the lid on
- Put the whole mess in the food processor and blend for a while
- Add milk, butter and salt
Heaven.
And now, I am eating these:

I’m going to go ahead and ignore the irony of eating cookies while watching a weight loss show, and just enjoy the rest of my night while keeping my fingers crossed for a snow day tomorrow. (We are supposed to get up to 18 inches!!)
Ouch, Monday.
Posted: October 26, 2009 Filed under: Uncategorized 20 Comments »I forgot how time consuming and exhausting my job is! I also forgot how much I laugh during the day. It’s a fair trade.
I worked from 7am – 7pm today, and then came home to do more work for an hour. I can’t even begin to tell you what I was doing either…just work.
Also, I started doing Jillian Michael’s 30 day shred this morning. It was just a moderate workout – but I was taking it kind of easy because I wasn’t sure what to expect in terms of length. It’s only 20ish minutes, so tomorrow I will push it for sure.
Here is what I had post-Jillian

Yup, more post-race swag. I reaalllly liked this. It was so tangy and the perfect texture for a smoothie. Although I have 3 more in the fridge…I would probably buy this with my own dinero.
I also had a ww English muffin with Justin’s cinnamon peanut butter – delish.

On another note, I cannot WAIT for daylight savings time to end…which I think is this Sunday! (Does anyone know for sure?) Part of the reason I love it so much (besides the fact that I am a 24 year-old with the mindset of someone 50 years older) is that I can maybe start to get some good breakfast shots again! We don’t have a lot of light in our kitchen, and my breakfast pictures have been increasingly dark and ugly because the sun doesn’t usually rise until I’m in the car. (See above photos for proof)
My classroom, however, is lit spectacularly!

Newman’s protein packed pretzels (ppp) – which are really growing on me. Plus a tiny bit of cottage cheese, a pear and a Lara bar (I didn’t eat the baby bar).
The pear got all cut up and took a dive into the itsy bit of cc that was left in the container.

What a spectacular combo. The only thing it could have made it better is cinnamon. Duh.
Then for “snack” I abandoned my one-bite-policy because I forgot how
hangry I get at the end of the day without snacks (did I really just have one week off?! Feels like longer.) 
I had the whole darn cupcake, and half of this little pink candy that a sweet student brought me from her vacation in England. It didn’t make me feel full at all, but gave me the sugar buzz I needed to get another 3 hours of work under my belt.
I needed something wholesome for dinner – which usually means salad.

Best. Salad. Ever. Lettuce, cucumber, ½ avocado ½ acorn squash (cooked a few nights ago, and warmed in the microwave), a sprinkle of cheddar cheese and lots-o-balsamic-vinegar. I love the combination of cold/hot foods together. Warm squash on cold salad is unbelievable. Try it.
Aaaand I just looked at the clock and realized that it’s way past my embarrassingly early bedtime, so off I go.

Salad and Snow

I woke up early enough, but then got sidetracked reading blogs, and was subsequently rushing to get ready for church. As a result, breakfast was quick.

Coffee and this smoothie (I’m still living off post-race swag) which I drank half of last night, and half of this morning. Before drinking it, I put it in the blender, dropped in a kiwi and a bit more water, and blended it. The kiwi added good tartness that I so desire when it comes to fruit. So dang.
Then I ate this in the car.

A pita with roasted red pepper hummus. It was a little dry, but got me through the morning to lunch.
My grandma, aunt, uncle, cousin, mom and dad met Meeker and I for lunch at mi restaurante favorito…Sweet Tomatoes. This is an all-you-can-eat salad/soup/dessert bar and it is the ultimate test of my will-power because everything is so darn delicious that I have to practice self-restraint from the second I walk in the door.
I started with a big, fat salad. Full of all the good stuff…

Lettuce, zucchini, carrots, garbanzo beans, beets, cucumbers, corn, broccoli, raisins, sunflower seeds, olives, red cabbage.

Too good. Too, too good.
Then it was on to dessert…it was extremely difficult to pick only these 3 treats. As much as I give lovies to salad, trust me when I tell you I could have skipped the greens and eaten a mountain of desserts for lunch.

A baby cinnamon roll, one spoonful of chocolate mousse and the best crispy, tart, crunchy grapes ever.

That cinnamon roll is really a biscuit, with cinnamon chips and frosting. Again, so dang.
I may have picked at my grandma’s dessert plate, too. Here is a picture of my cute mom and Nonnie…

Oh, they make me smile.
Miraculously, I was hungry a few hours after returning home. A yogurt mess was on the menu.


- Plain yogurt
- ½ pear
- 1 crumbled Hermit
- A few cinnamon Quaker oat squares
- And…….

½ of this guy…cinnamon + peanut butter = pure love.
Now I’m off to do the snow dance…

Yeah, even teachers pray for snow days…and they do it after a week long hiatus from work.
Cake Lover

Slept in a bit again this morning, watched some Food Network, learned what Spatzle is and can’t wait to make it, got in a good davefarmar yoga session and went to lunch with a friend in Boulder. Full, fun day, and it’s only four o’clock (on the dot, I’m in my drop top cruisin’ the streets…)
On to the eating goodness of the last few days.
I was really hankering for acorn squash the last couple of days, so last night I popped the whole sucker in the oven at 450* for 40 minutes, then topped it with salsa, hominy and black beans.

Then mashed it all up…

Took a few bites, and decided it was lacking in texture, so I “caked it”…

(mashed it down in a pan with some non-stick spray, and formed into pancakes squashcakes)
Topped with plain yogurt and (obviously) cinnamon…

So darn delicious. The “caking” made it crispy on the outside, and still sweet and gooey/squash-like on the inside. I only had one – and popped the other one in the fridge. Good leftover material.
Then I had more cinnamon laden dessert…

That is vanilla ice cream, a pile of cinnamon, Newman’s alphabet cookies (which rock my socks), and a chunk of dark chocolate (that also does some sock-rocking). Dessert perfection.
This morning, before Dave kicked by butt with some yoga, I had ½ a pomegranate.

I forgot how much I love these little seeds – they are perfectly tart and juicy…always. I don’t think I have ever had a mushy or dry pomegranate.
Also, I have found that if you break the whole fruit apart underwater, the seeds sink to the bottom, and all the white, inedible part floats to the top – it makes it a lot easier to disassemble.
After yoga (or yogurt…as we affectionately refer to it in our household), I tried Sarah’s pumpkin pie breakfast cakes.

New addiction. Although mine didn’t turn out like Sarah’s looked…they tasted JUST LIKE pumpkin pie filling. Exactly.

To make these addicting little cakes…
- ½ cup pumpkin
- 1 egg white
- Sweetener (I used brown sugar)
- Pumpkin pie spice (if you have it…I didn’t, and they were still delicioso)
Mix it and throw it in the microwave for 3 minutes. I just now realized (after re-writing the recipe), that I used too much pumpkin – but I’m not going to complain…they were still fantastic (especially if you like the consistency of baby food). I topped them with plain yogurt with cinnamon and maple syrup mixed in. Yummers.
Then I drove my sassy little car (with new license plates!) to Boulder to meet my friend Emily for lunch. I’ve known this girl since preschool, so conversation is always comfortable and easy. I love friends that are like family. Here is a picture of us in college. I’m on the right with the duck lips. We pretended we were twins from age 6 – 16.

Anyway…I wanted Thai food, but the place was closed – so we tried a new place called 13th Street Cafe – which used to be a Dairy Queen – and I have to say…I preferred it as an ice cream joint. It wasn’t bad, but the customer service left something to be desired, and we got hit on accosted as we were eating lunch by two weirdos who saw us in the window, and came in to tell us that “we looked bored” – just an odd experience.
I got the veggie wrap. It was pretty tasty.

Lots of good stuff in there: avocado, caramelized onions, roasted red peppers, mushrooms, banana peppers, artichokes. I could have made it myself and skipped the weird guys.
Now I am home snuggling with my kitty and soaking up the last few drops of my fall break.

Friday Eggs and Figs
Posted: October 23, 2009 Filed under: Breakfast, Mid-Day Yummies 15 Comments »I slept in to a whopping 8:40 this morning. Dang – even now, I’m impressed with myself. I’m usually a pre-dawn riser, so that was a big deal. I was dreaming about playing soccer and I remember thinking that I really didn’t want to wake up. But I did. After groggily stumbling downstairs, I did some yogadownload (morning flow #1) to slowly come out of my hibernation.
Then on to breakfast…
I wanted the combo of veggies and eggs, but I’m not very good at flipping omelets, so I always bake them.
Step-by-step…


Sauté the veggies and whip the eggs.


Preheat the oven to about 350* – then decide you want corn and tomatoes with the other veggies and add them.


Unless you have a non-stick pan that can go in the oven (I do not) – it is crucial that you spray non-stick around the edges of the pan before adding the eggs. Otherwise, you’ll be scraping breakfast out of a screaming hot pan. Oh, and add cheese of your choice, I went with cottage. Then pop the whole thing in the oven.



Top with avocado and hot sauce of choice.
And because I don’t really feel “full” unless I have some sort of grain, I toasted ww English muffin with butter and cinnamon.

Such a good breakfast.
I ran a few errands after this, and then came home to eat more. This one is a repeat from yesterday. Lo siento.

Lettuce, cucumber, shredded carrot, green bell pepper, tuna with mustard, hummus and balsamic vinegar.
To round out my lunch, I had four delicious Fig Newmans.

I forgot how much I love these little things. So chewy and satisfying.
I’m off to enjoy the last weekday of my fall break!
