Colorado is crazy. Yesterday was snow. Today was sun.

(Yeah, that’s my reflection in the window.)
But I’m not complaining. We are supposed to get a big storm tomorrow.
I got to come home EARLY because I got my grades posted, and Meeker and I took the puppy to the dog park. It was gorgeous. Before we went, I had some random eats.

Boca burger with spicy mustard in a wrap…then spinach.

Then into a neat and tidy star shaped sandwich.

…looks like a little house, right?
Then I had 2 cookies and an entire 10oz box of spinach. Straight up. Eaten with my fingers.

After walking around the dog park for a couple of hours, I came home to try something new!

I was on the phone with my best friend the other day and she mentioned that she had Brussels Sprouts for dinner. Now, I have to admit, I have never even considered eating these little nuggets – for no particular reason – I just tended to steer clear. That was until tonight…
Holy Yum.

This was: ¼ head lettuce, ½ sweet potato, 5-6 Brussels sprouts, and 4 white mushrooms.
All (minus the lettuce) was sautéed in some evoo, salt, and garlic powder. Then I poured balsamic vinegar down over the whole party. A.MAZ.ING.
All I could think about while eating this is “Why did Brussels sprouts get such a bad rap?!” – seriously, there is nothing odd or scary, or even really remarkable about the little guys. They almost taste like cabbage…

Thank you Jocelyn for introducing me (via the telephone) to these wonderful little vegetables!! They will now become a regular part of my diet.

My mom never made brussels sprouts for our family because she had a bad experience with them growing up. When I started eating them as an adult she was shocked. I cook mine in a pan with some evoo and maple syrup – so good!
Mmmm maple syrup!? I bet that is awesome! Next time…
Poor brussel sprouts, they do have such a bad reputation!
I feel sorry for the cute little guys. They are quite yummy…I have out them on BBQ skewers before with lots of other veggies and they were quite marvelous.
I love brussels sprouts too! I usually roast mine- I definitely want to try them with the maple syrup
My mom says my grandmother used to boil them and it was disgusting!

yay for getting everything graded! Weather is freaky like that, I blame global warming. Love the random snackage. I’ve never tried brussels before but my mom and dad told me they were gross when i was a kid so I’ve never tried them haha.
