I had plans for my LAST “long” run before my race next weekend, however….I woke up to 18*F and snow. So I watched a movie and tried a new recipe instead.

My brother sent me a recipe for quinoa a few weeks ago – and this morning I tried it out. I posted the exact recipe, however, my version went like this:

  • 1 cup water
  • 1 cup milk
  • 1 cup quinoa
  • 4 strawberries, cut and mashed with a fork
  • 1 spoonful of peanut butter
  • Cinnamon
  • Maple syrup
  • 1 cap full of vanilla extract

Combine the water, milk and quinoa and bring to a boil over high heat. Reduce and simmer (covered) for 15 minutes. Meanwhile, mash up the strawberries. When all the liquid is absorbed, put a portion (about ¼) into a bowl, top with strawberries, vanilla, cinnamon and drizzle with maple syrup. Then dig in with a spoonful of peanut butter.

After this hearty breakfast and a lot of couch time, I headed over to Meeker’s parents house to use their treadmill. I am so thankful that they have one – I was not about to go run around in the snow this morning. Some mornings, yes. This morning, no. I don’t know my exact mileage/time because my hand accidentally hit the “emergency shut off” in the middle and I lost track. I am hoping it was about 6 miles.

After almost an hour on the rat wheel treadmill, I called it quits and headed to Whole Foods for some loving in my tummy.

MORE quinoa (red this time), spinach salad, tofu, beans, mini corn, and some antipasto salad.

I clearly hated it.

I really need to clean that house and take a shower – we’ll see how that goes. Until then, I am watching this stud…
