Ouch, Monday.

I forgot how time consuming and exhausting my job is! I also forgot how much I laugh during the day. It’s a fair trade.

I worked from 7am – 7pm today, and then came home to do more work for an hour. I can’t even begin to tell you what I was doing either…just work.

Also, I started doing Jillian Michael’s 30 day shred this morning. It was just a moderate workout – but I was taking it kind of easy because I wasn’t sure what to expect in terms of length. It’s only 20ish minutes, so tomorrow I will push it for sure.

Here is what I had post-Jillian

Yup, more post-race swag. I reaalllly liked this. It was so tangy and the perfect texture for a smoothie. Although I have 3 more in the fridge…I would probably buy this with my own dinero.

I also had a ww English muffin with Justin’s cinnamon peanut butter – delish.

On another note, I cannot WAIT for daylight savings time to end…which I think is this Sunday! (Does anyone know for sure?) Part of the reason I love it so much (besides the fact that I am a 24 year-old with the mindset of someone 50 years older) is that I can maybe start to get some good breakfast shots again! We don’t have a lot of light in our kitchen, and my breakfast pictures have been increasingly dark and ugly because the sun doesn’t usually rise until I’m in the car. (See above photos for proof)

My classroom, however, is lit spectacularly!

Newman’s protein packed pretzels (ppp) – which are really growing on me. Plus a tiny bit of cottage cheese, a pear and a Lara bar (I didn’t eat the baby bar).

The pear got all cut up and took a dive into the itsy bit of cc that was left in the container.

What a spectacular combo. The only thing it could have made it better is cinnamon. Duh.

Then for “snack” I abandoned my one-bite-policy because I forgot how
hangry
I get at the end of the day without snacks (did I really just have one week off?! Feels like longer.)

I had the whole darn cupcake, and half of this little pink candy that a sweet student brought me from her vacation in England. It didn’t make me feel full at all, but gave me the sugar buzz I needed to get another 3 hours of work under my belt.

I needed something wholesome for dinner – which usually means salad.

Best. Salad. Ever. Lettuce, cucumber, ½ avocado ½ acorn squash (cooked a few nights ago, and warmed in the microwave), a sprinkle of cheddar cheese and lots-o-balsamic-vinegar. I love the combination of cold/hot foods together. Warm squash on cold salad is unbelievable. Try it.

Aaaand I just looked at the clock and realized that it’s way past my embarrassingly early bedtime, so off I go.

  1. Daylight savings ended here in Italy this past saturday (?) but I’m pretty sure it ends this weekend for you all back in North America. Loving the cottage cheese and pear combo!

I can relate with the afternoon snack thing…There are always sweets lying around in the staff room, which I seem to pick up and eat, even if I don’t really need them or know that they are not the best thing for me. But when you see those yummy donuts or cake just sitting there and calling your name, it’s hard to say no! Ahhh!

  3. I am so excited for Daylight Savings to end too (it’s Sunday, I mean technically I guess it’s 2 a.m. on Sunday morning) I just like the fact that it means winter is coming because I LOVE winter. I used to hate coming home from work in the dark but now it doesn’t matter since I live and work in the same place! That salad looks so good, the cheese and the squash and really everything. Great eats!
    Annnnd I can barely say hello in Spanish (jk), I am pathetic.

  4. HAPPY TUESDAY! I hope it’s no longer snowing there!! Let me know how Jillian’s 30-Day Shred thing is…it’s all the rage in the blogworld and I’ve always been curious to try it out.

    As far as how many languages I can say hello in? I thiiiink 5 – English, Greek, Latin, Spanish and French!

  5. Oh girl haha I’m a 23 yr old with a 50 years older mindset, so I’m right there with ya! ;)

    Your cottage cheese/pear combo reminds me of this cottage cheese I bought a few weeks ago that was really good. I don’t usually like pears, but thought I’d try this new, fancy brand of cottage cheese, Rachel’s- have you heard of it? The containers are really pretty and the flavors are fun… it was a bit pricey, though, so I’m glad to see your combo here. For whatever reason, it never popped in my head that duh, I can just buy a pear and do it at home. Haha have a good day!

  6. I do believe daylight savings is this weekend. And I don’t blame you on the cupcake. It looks homemade…not store bought! Wish we had brought you back something edible from Moab….do dinosaur bones and rocks count? He he!

  7. I’m with you on the daylight savings, pictures with a flash taken at 6am can look kinda hideous. Although my dinner pics are also taken with a flash, bummer.

    I like the one bite policy and can certainly see how it could come in useful with a job like yours!
