Ignore the Irony

I forgot my camera at school so my lunch went unphotographed (cottage cheese, black beans, avocado…fantastic). Blogger fail.
What I can show you is my unbelievably good dinner.

Chicken: marinated in balsamic vinegar and spicy mustard. Cooked in a skillet.
Mashed potatoes cauliflower: the best, creamiest, most delicious thing ever.
Meeker even says they taste exactly like mashed ‘taters…and he is a true meat and potatoes guy. That’s a true testament.
To make them…
- Cook onions and cauliflower in a pan on the stove with the lid on
- Put the whole mess in the food processor and blend for a while
- Add milk, butter and salt
Heaven.
And now, I am eating these:

I’m going to go ahead and ignore the irony of eating cookies while watching a weight loss show, and just enjoy the rest of my night while keeping my fingers crossed for a snow day tomorrow. (We are supposed to get up to 18 inches!!)

I think the predicted snow fall for Hawaii this winter is…zero inches. I did hear the Big Island gets a little snow in the mountains though. Let it snow!
I’m man enough to admit that biggest loser chokes me up on a regular basis. Now don’t tell anyone.

The pic of your meal looks great…when I first looked at it I thought it was a bowl of plain yogurt with a cinnamon bun on top! Ha! Was I wrong or what?!
I am starting to feel like you’re my long long food twin haha I routinely watch weight loss/health shows w chocolate or a big package of cookies next to me…good thing the people working out on the show can’t see us from the other side of the tv, eh? Oh, and I have been dying to try mashed cauliflower!

ummm i am pretty sure everytime i watch the biggest loser, i am in fact eating dessert and NOT working out

BTW I too have washed the iPod (and numerous pairs of headphones) I wonder who is to blame here. Me for not checking pockets or him for not emptying, I guess both. Biggest loser Imis on my agenda for the afternoon. Also thanks for sharing your cauliflower technique, I have always wanted to give those a shot and now I definitely will!
Great idea for the cauliflower. My hubby is also Mr. meat and potatoes. Luckily he also loves cauliflower so I might have to try that soon.

Oh the snow…..I have no words. I’m still shocked I made it to work this morning….
Last night i was eating a big bag of popcorn while watching biggest loser, so dont worry your not alone! haha.
So i’m so totally intrigued about these cauli mashed “taters” and i need to try. Do i just steam them and then mash?? so confused but so anxious! if they taste just like regular mashed taters, then sign me up!

Ahhh snow. I’m so not ready for that yet. Eeeek. Hopefully here in NYC we dont’ get that for a while! haha I’m definitely a summer/spring girl.
