…for soup!
But before we get to that, I tried a new drink that I got as a sample after my race a few weeks ago.

It claims to “control the appetite” – so I decided to give it a try when the mid-afternoon hunger struck. The stats aren’t bad…

It does have some weird ingredients, but it held me over until about 5:30 – tasted good, too.
After the “snack” wore-off, I made some good veggie/turkey soup. When it’s been snowing for 2 days straight, you’ve gotta make soup. Am I right?
This was my first soup of the season and it was so good.

I like to use ground turkey in soups – keeps me full – plus every veggie I can get my hands on. This particular soup included: onion, garlic, carrots, zucchini, tomatoes, green peppers and the white addition is hominy. I also added some Italian seasoning and about 4 cups of water. A good mix.

Here it is pre-cooking. After bringing it to a boil over high heat, I let it sit on low heat for about an hour.
Here’s (one of my) bowls.

I had 2.
Then I decided that it had been too long since I had made (or eaten) dessert…so I tried my hand at a recipe I saw on Rachael Ray. I didn’t have cranberries, and instead of store bought pie crust, I used pastry dough that I made a while ago and stored in the freezer. Other than that, I followed the recipe.

Oooh flaky pastry dough…I love you so much. This was delicious. I forgot how much I love baked apples. A great ending to a Thursday – my favorite day of the week. Now I’m off to watch The Office.
What is your favorite day of the week and why?

I love a good homemade soup. Yours looks good.
Saturday, definitely.
Yum, I love homemade soup! I just made my very first one a few weeks ago- far easier than I’d anticipated!
I think I saw that pretty dessert on RR.. looks perfect for a snowy night!

Oh my the apple pastry combo looks SO good and fall-esque. I love!
my favorite day of the week is Saturday. It’s probably a favorite of most people but since it is the only day that I have no work responsibilities at all it’s is MY day that I get to spend with Darin. Your soup looks really yummy and easy, I need to start making some and freezing it while all the veggies are still plentiful.
Ooooh – those look delicious! I think I would rather use your recipe than hers! And I definitely agree on the soup front. There’s nothing better than a huge bowl of soup on a freezing cold day
I hope you enjoy your Friday and your weekend! Happy Halloween if I don’t talk to you!
Oh – and Friday is DEFINITELY my favorite day of the week. Everyone is always in good moods because it’s Friday and you have the WHOLE weekend to look forward to!
You have a great Halloween too, my friend! And I like Thursdays for the same reason…the weekend is in sight, and you have so much to look forward too!
hominy is so underrated. you can use it in so many dishes and it IS delicious!
ummm your mini apple desserts are adorable – hope you are staying warm in all that snow
Love homemade soup! Looks so good!!! And those pastries look amazing!
My fave day of the week is probably Sunday. It just feels so luxurious and relaxed because there aren’t as many plans and obligations.
fav day of the week is certainly saturday…no work the next day and just a day of relaxtation!
I LOVE baked apples, that pastry looks unbelievable!
haha thanks for the comment on my post about ‘hopping’ on the treadmill, I guess I more hopped ON it, then ran my tushie off…still not a piece of cake all the time even though I am a personal trainer!!
