Whew!

It was an exhausting and wild day in 3rd grade. But it felt good to be back in the groove.
Breakfast was leftover savory oats (only about 4 spoonfuls), to which I added 2 egg whites, 1 full egg, salsa and ¼ of an avocado.

I tell you, savory oats are my new obsession. I never thought I would hear myself say that.

So dang.
Then, for lunch, I photographed hippie style while I was packing it up last night.

And all together, now…

I ate ¾ of this – and saved the forze shake for another day. I also snagged a piece of pan de los muertos from the teacher’s lounge while picking up my mail.
When I got home, I was hungry enough to eat my arm – so I snacked on these addicting crisps while I prepared din-din.

I surprised myself with my willpower and foresight – and measured out a serving before I dug in – only 110 calories for a big ‘ol cereal bowl full. Good snack if you ask me.
I was feeling so hangry, that I hit up Heather for a quick recipe: Black Beans and Rice with Pumpkin Vinaigrette. Too easy and sooooooo delicious.

And my bowl…

I’m so excited that I have leftovers for lunch tomorrow.
True to form, I followed up with dessert.

Two of Meeker’s favorite – straight out of the freezer. I swear that these cookies are like medicine. They – without fail – make me feel phenomenal. They always settle my stomach (which is usually mad at me for not feeding it all afternoon, and then bombarding it when I get home) and make me feel comfortably full. I’m in love.
Hope your Mondays are wrapping up nicely – hasta mañana.

I thought I wouldn’t like savory oats either but then I made them with a sunny side up egg and lots of hot sauce and fell in love. Between your yummy pictures and my new bottle of Siracha I feel like I’ll have to make a batch soon!

I loved the bbq flavored ones the best! Have you tired the sugar cookies yet? if not bare yourself because they are SOO amazing, but you get 10 in a 110 cal serving, so its totally great! It is always nice to get back in the groove after a long break (although breaks are the best!). This dish you made from hangry pants looks clean and simple but with a slight twist. I love rice and beans, sort of a comfort foodfor me!
Me too! It was very comforting!
No more snow – it has melted!! I am so glad. I am the same way with snacks – so I have to portion them out for myself. haha.
No more snow?
I have just a problem when I’m making dinner and start snacking. It’s like I eat a whole other dinner before I eat dinner.
I’m so addicted to soy crisps – I absolutely love them. But I more love those chocolate chip cookies. Seriously, all your cookies come out looking so amazing! SHARE YOUR SECRETS!
I really like the idea of adding avocado to your oats, will definitely be trying that.
I always try to measure out servings of crackers, chips, bite size cereal but as soon as the serving is gone my hand is back in the box!
pumpkin vinaigrette??!! that sounds incredible!!
and YESSSSS. i love that you love savory oats. i’m trying SO hard to not eat them for every meal…
I love savory oats too, and I never thought I would either. That black bean dish looks great!
Oh my goodness, those look like my kind of cookies!! I love baking, especially chocolate chip cookies!
Oh geez, when I have snacks from a bag/box, I will almost inevitably demolish half the package in one sitting unless I measure it out haha. Have a great Monday!!!
yay for being back in action! your savory oats look amazing – i haven’t had those in forever, and your pic is making me want them NOW!
It always feels good to get back on a schedule after being off of one for awhile. Sounds like you are doing great back at it!
