Chatty Cathy

This cheery little penguin helped me get back into the swing of things today. I’ve mentioned this before (probably a million times), but my classroom is the temperature of a meat locker, so I drink hot water all day long. I’m not a huge fan of tea, but I love holding something warm in my hands (and up to my cheek on occasion) – so I sip on hot H2O and I love it.

I actually felt very refreshed today. The alarm made me want to scream this morning, but I got over it as Jillian forced me to do squat jumps and plank-twists as the sun came up. The rest of the day went well, the kids were awfully chatty, but I honestly don’t mind “chatty” – there are worse moods when it comes to 8 year olds. I can do chatty.


I always call my class “Chatty Cathys” – and the boys hate being called Cathy. I guess I could call them “Chatty Charlies”…hmm, I think I like that!

I stayed at school way too late planning and re-arranging desks, so when I got home at 7ish, I was pretty hungry. The only possible thing I could have made for dinner was in the freezer – and I was kind of dreading it, but it came together surprisingly well and turned out to be exactly what I wanted.


Meeker cut up some chicken (because I am repulsed by raw meat) and then I seasoned it with salt, lemon pepper and garlic powder and sautéed it until slightly browned. Next, I added frozen broccoli and green beans and seasoned them similarly. Once everyone was cooked, I poured a mixture of mustard, soy sauce and water over the pan. Perfection. I ate it atop ½ cup rice and drizzled some sweet chili sauce over the top. It really hit the nail on the head.

Monday Night Football is on, but I plan to plug in some headphones to the computer and watch some Everwood…the best show. (I’m already on season three, Cait!)

Edited to add…

I just found this piece of my mom’s cinnamon/chocolate cake in the back of the fridge. It was fantastic. That is all.

    OK – That cake looks soooo good! Katie, don’t know if you ever want to try recipes from friends ( or former teachers), but I have one with soft polenta and crimini mushrooms that knocked my husband’s socks off – love to share it with you for the cake recipe! Hi, Brenda – remember when we played soccer??

    I’m repulsed by raw meat either haha I can barely look at it when I cook it. You should have seen the first time I made a whole chicken.. it was amusing.

    I love that term “chatty cathy”- so cute. That’s what my mom would always say while I was growing up.

    I don’t love tea either but I’ve made myself like it solely because I hate being freezing during the day (and so with ya on the holding it up to your cheeks thing!)

    And oh my gosh – that cake. My cookies pale in comparison.

    I always used to tell my kids (even my all boys class) that they were being ‘chatty cathys,’ I love throwback expressions! To be fair, I also used to tell them to ‘hurry scurry like a bunny’ whenever we were in the hallway! :)

  8. That cake looks incredible and if I could digest chicken I would totally re-create your dinner. Maybe I’ll just use some salmon or turkey instead…

    My office is absolutely freezing. We have one thermostat for the whole building and I’m always the only cold one. As a result I have my own little space heater and drink 2-3 cups of hot tea a day.

    Haha, funny that the boys don’t like to be called Cathy. I guess that’s a big deal to an 8 year old boy!

    i never knew you were repulsed by raw meat! haha so is my old roomie. it was so funny to put it near her.. just to tease her. don’t worry, i wouldn’t do that to you. that cake made me drool!!

    Cinnamon chocolate cake = best thing ever. My mom makes something that looks similar to this and I always freeze a piece or two and when I find it I feel like I’ve won the lottery! Your penguin mug is so cute! And I am glad that your freezer meal came together well, it certainly looks healthy!
