I woke up to an extra special delivery!

Mix 1 sent me a case of smoothies to try! I had tried these before at the Denver Marathon, and really liked them – so I am very excited to try all the different varieties.

This company is local (Boulder, CO) and has some pretty good stats:

If you, like me, are wondering what Luo Han Guo is, check it out…it is a longevity fruit from China, and is apparently 300 times sweeter than sugar. I like sweet things.

I’ve yet to try any of my new shipment, but I assure you that I will let you know when I do.

For breakfast, I had cake and coffee, before an hour long skype date with my best friend.

If you’ve read my about pageyou already know that I think cake is a perfectly legitimate choice for breakfast.

Around lunctime, I snacked on some sweet potatos – sliced thinly, seasoned with salt, garlic, and chili powder and cooked at 400* for about 30 minutes.

Then, the best part of the day…my parents came over to make pizza!!

My mama baked a cake. If there was ever any question as to where I inherited my sweet tooth, here she is…

The cake was so simple. Just four ingredients: egg whites, cocoa, powdered sugar, cinnamon. That’s all.

Veggie Day

After my veggieless day, yesterday, I honestly woke up craving green.


Quick Fix – a green monster with ½ a banana, 1 scoop protein powder, a lot of spinach, water, almond milk. Very filling, very yummy.

Lunch looked less-than appetizing, but it actually hit the spot.

First up was broccoli slaw with hummus and balsamic vinegar.

Next, I mixed some cottage cheese with berry applesauce.

I’m aware that this looks disgusting, but trust me, it’s way, way better than it looks.

Then I snagged a handful of an interesting trail mix I found in the lounge…

I found out later it was made by the kindergarten class for their “hundred day” party. We have been in school for 100 days! Hard to believe.

I snacked on this guy I found stashed in my purse around 4pm.

You can even see that beautiful three-item-ingredient list: dates, pecans, almonds. Yuuum.

Back at home, I was craving veggies, Again. Isn’t it cool how your body knows what kinds of foods you need to balance things out? I think so.

The produce drawer was low, so I reached for the last of the broccoli slaw and sautéed it in evoo and bbq sauce. Meanwhile, I baked some tofu (seasoned with salt, garlic powder and chili powder). Later, I combined them all, and dabbed the tofu with more bbq sauce. Holy yum. I wanted this x5.

Then, I ate a bowl of cereal for dessert (unpictured).

Finally, some cake.

Let’s hear it for Thursday. It’s my favorite day of the week because the weekend is just around the corner. Everyone is anticipating Friday, and the day just seems so manageable.

Especially when you start it off with a breakfast like this.

Savory Oats½ cup oats, cheddar cheese, salsa, hummus, siracha, an egg.

This filled my belly almost all day, which is highly unusual for me. I snacked on some applesauce and cottage cheese around lunchtime, but otherwise…that heck-of-a-breakfast really held me over.

Dinner, my friends, was cake. Because I do what I want.

Meeker is fond of pointing out that I have a blog dedicated to
cake, but rarely make it. (I don’t know why he cares, he doesn’t even like sweets) Well, tonight I decided that there would be cake. And after two pieces of this messy applesauce cake – I decided that I couldn’t be bothered to fix a real dinner. What better way to celebrate a Thursday?

The cake didn’t come out of the pan as easily as I had anticipated. In fact, I pretty much had to rip it out of the pan – in two pieces. Next time I will be sure to line the bottom with parchment paper – but until next time, I’m enjoying this delicious mess topped with a powdered sugar glaze.

Did I eat any vegetables today? Not one. Could I have made the cake healthier? Yup. Did I love it just the way it was? You betcha. There are plenty of days when I all I want to eat is broccoli, so I don’t feel the slightest bit guilty for wanting cake for a meal. It’s all about balance in my book.


Yode

This is an ode to yogurt. A yode, if you will.

But not just any yogurt, the best yogurt mess I have ever eaten.

I can’t even tell you how insanely delicious this was. I ate it for dinner last night and breakfast this morning…if that gives you any idea.

Look at that chocolate river…all ooey-gooey and melty. Simple deliciousness. Please run to your kitchens and go make this. (oh, and I guess now would be a good time to label myself a hypocrite for saying I don’t like bananas on several occasions. I guess I do like bananas. As long as they have chocolate and peanut butter near them. Just call me Elvis. The hypocrite. Wait, I’m confusing myself. No more mixing labels and comparisons)

Applesauce and Red Pens

This morning, after a nice walk with the Punk, I had a very satisfying breakfast.

Oats in a very empty almond butter jar. I’m not even sure there was any almond butter in there – I cleaned that sucker out pretty well with a spoon earlier this week.

These oats were pure mush. I cooked ½ cup of oats in THREE cups of water for about 40 minutes (on low) while I got ready for work – the result…major volume. I also added a little plain yogurt to make them creamy and wonderful – then topped it all with a handful of Quaker oat squares. I sat down to eat this, and then realized I need to leave for work, so I screwed the cap on, and ate it at my desk instead.

The lighting is waaaay better at my school, anyways.

I drank a ton of water today (mostly because I didn’t pack enough food), and then for lunch, I had a measly few bites of soup (literally, like 5 bites) – it is a tiny Tupperware.

This deliciousness was left over from last night. It contained: ground turkey, zucchini, sweet potato, onion, garlic.

I also had some new applesauce (from a giveaway I won!)

…mixed with ½ cup of cottage cheese.

Ooh man, you MUST try this applesauce AND this combination. Holy moly, both incredible things.

Now I’m home, contemplating what to do for dinner and feeling a little lazy. Any suggestions? I may just snack while watching The Biggest Loserjust watching people on diets workout makes me hungry.

Highlights from the 3rd grade world…


My kids are obsessed with red pens, and they are always smuggling them off of my desk. However, when I saw this, it totally made my day. Look closely, I’m wearing a shirt with my name on it!


Whoops!

I just wrote a long post, and then accidentally deleted it, along with all my pictures from the day. Waaaah!

In words…workout, green monster, vitatop, leftovers, apple, orange, sunbutter, protein brownie batter, applesauce package, turkey/sweet potato soup.

Also, my classroom smelled like a fart all day long, and I caught a little boy picking up trash off the floor and eating it. Gag.

…it tastes just like brownie batter. Thanks to Jessie for sharing her obsession with this gooey goodness yesterday.

About an hour later, my stomach got a little rumbly, so I had a vitatop that was stashed way in the back of the freezer.

I kind of knocked these a while ago, but after tasting this kind – I think I’ve officially changed my position. The CranBran was really good, I would highly recommend it. Later, I took a bath (because I was freeeezing) and a nap (because I was sleeeepy).

Meeker and Punky woke me up around 3:30 and I decided that since I had lunch at 10:50am, it was time to make dinner.

Next, sprinkle some Quaker oat squares over top

Now you have a healthy, protein packed breakfast that tastes like dessert.

Lesson Learned

I guess all of those early morning spin classes caught up with me today. Not only was I exhausted, but I was the hungriest I have been in a long time.

(By the way, spinning was awesome again this morning – hardest class yet. Plus, we watched a Warren Miller film, which reminded me of my college days when I used stalk and follow Jeremy Bloom around campus.)

Backtrack to before the workout…

Afterwards, I refueled with a green monster.

½ banana, lemon juice, spinach, and milk – easy and yummy. I thought I was full after this…hah, little did I know.

About 9:30, I had a hunger attack. When I say attack – I mean it. I thought I was going to pass out if I didn’t eat something (anything) soon. I hadn’t packed any snacks (lesson learned!!) so I went to the staff lounge in search of something. I ended up stuffing my face with crap – a chocolate muffin (the size of my head), about a pound of pineapple and a heart shaped neon pink cookie (Lord knows what it was made of) – I was still starving afterwards, so I drank a gallon of water, and was still famished. However, I couldn’t really do much more about it – so I just waited it out until lunchtime when I came home and filled up with fiber.

Thankfully, I felt full after inhaling this, and I stayed that way until dinnertime, which was a Rachael Ray recipe – it only took me 30 minutes! (Usually RR’s thirty minute meals take me about an hour – I’m a slow cook, I guess)

Afternoon at the drive-in…

Third, and last, day of the week for Mrs. Unger.

Actually, I do have to be at work tomorrow, but the kiddos don’t – so it’s pretty much a day off.

Before spin class this morning, I had a little combo that I’ve become quite fond of.

Then, after a killer workout (I LOVE SPINNING!!) I had a banana + an apple + sunbutter + coffee. Sorry, no pictures – it was eaten in the car. Here are some recycled images in case you have forgotten what apples and bananas look like.

Incidentally, it is Vegan Thursday.

I came home for lunch and had the exact dinner that I had yesterday.

Lettuce, black beans, corn, salsa, Portobello Gardenburger, chips. B-e-a-utiful.

I also brought some more coffee and another apple.

It was a two coffee day…more on that later.

When I came home, Meeker was proudly standing by a crock pot full of chili that he had made, and even though it is vegan Thursday, I could hardly pass up an already cooked meal, made by a sweet husband. So I had a mug full.

We have a lot of elk because of a brother-in-law’s hunting trip last month. Last time I tried elk, I hated it. BUT elk chili is a whole different story. This was delicious, and I’m so happy to have leftovers.

Highlights from the 3rd grade world…

I have a marble jar in my room, and when the students are particularly well-behaved, they get a marble. When the marble jar is filled, the class gets a reward. We filled our marble jar last week, and for the reward, the students planned an afternoon at the drive-in movies…in the classroom.


They all made cardboard cars (with the exception of the two cheaters who used pre-made school buses) and sat in them while we watched Ratatouille this afternoon. Then we had a car competition (as they dubbed it) and voted on the best car. The winners got free homework passes.
