When I grow up…

First of all, thank you all so much for your incredibly kind comments about the student who transferred out of my class on Tuesday. I can’t tell you how much they meant to me. It sure has been a crazy couple of days.

Last night, I came home and literally fell into bed, and slept until this morning – when I woke up and took Punky for a brisk walk. It was negative 16 degrees at that point – what a wakeup call.

Like my life, my eats have been rushed…but rest assured, I am still well-fed. That won’t ever cease.

Yesterday’s breakfast – eaten at school.

Bottom to top: plain yogurt, banana slices sunbutter, puffed rice, fig spread and cinnamon.

Lunch was an exciting can of soup (no, it really was exciting because I won it in a giveaway!

Yes. I’m so happy I won these soups – I had the red can – it was southwestern veggie, and for canned soup, it was fantastic.

Dinner was non-existent because, like I said…I came home and fell into bed.

After my chilly walk this morning, I came home to make an egg sandwich.

Toast, hummus, siracha, one whole egg, one egg white. Halfway though this deliciousness, I remembered that I was going to participate in Vegan Thursday – whoops!

Luckily, I had already (unintentionally) packed a vegan lunch.

Steamed broccoli, carrots and cauliflower – doused in balsamic vinegar and hummus. Small tortilla on the side. Wait, are tortillas vegan? Hope so.

Even better was the bowl I ate it out of

Mid-afternoon I snacked on a perfectly crunchy apple and trail mix brought to me by a student.

Sunflower seeds, pumpkin seeds, craisins, dried blueberries.

Dinner tonight was a new recipe – Artichoke Heart Risotto.

Risotto + artichoke hearts + peas + half a piece of Dempsey chicken. – Again, not vegan…I guess I’ll start next week!

Highlights from the 3rd grade world…

  • Yesterday, a little boy asked me: “Can I be gay when I grow up?”
  • Today, a little girl handed me a piece of paper on which she had written: “Elvis’ birthday is tomorrow and in 1958, he was drafted into the Army” – how’s that for a fun fact?
  • I am teaching my kiddos to write instructions and so I had them write recipes for PB&J sandwiches yesterday. There was a lot of creativity, but one little boy included bacon in his sandwich (which he spelled samwich)

When you were young and someone asked you: “What do you want to be when you grow up?“…what was your response?

    i wanted to be a doctor or a dentist because in the words of my kindergarten yearbook, “…because i like going to the doctor and the dentist.” what a loser.

  2. I’m SO exhausted this time of year; it takes me a while to get adjusted to the school schedule again. I’m surprised I haven’t had one of those come home, pass out days yet!

    When I was younger, I wanted to be a writer when I grew up. And now I’m a blogger…so I suppose some things never change. :-)

  3. haha, I love stories from my teacher friends, kids are too funny! In the same vein as your student, my friend Devon had a little boy ask her if he could be a mommy when he grew up. I wanted to be a teacher when I grew up. Whatever happened to that idea…?!

  4. I’m an educational studies minor, and I sat in a class a few weeks ago that did the same lesson, sandwiches and all! I bet it was a hit in yours, too!

    In 5th grade, I wrote an essay where I ranked my 3 top job choices: marine biologist, pro soccer player, and “peace-maker.” Happily, I think I’m figuring out how to move towards number 3!! In some way, haha.

    And if you’re going to add anything to pb&j, it should be whole fruit. Or honey. Nothing savory! Eew.

  5. Never underestimate the amazing powers of bacon! In Portland there is an amazing donut place called VooDoo Doughnuts and they have really funky/deliciously amazing creations. One is called the maple bacon bar and at first I thought it sounded so disgusting, but seriously…one bite and I was in heaven!

    I would at least give bacon in PB&J a try….

    When I was a kid, I wanted to be a doctor. And then a professional horseback rider. And then a marine biologist. Then a forensic scientist. Hm, somehow I ended up being a writer. How did that happen?!

  8. When I was a kid I wanted to be a professional athlete…a runner. (go figure…huh?) So while I may not have made it to the Olympics like I planned at the age of 8…I still like that I am able to race and incoprate running into my life.

    Okay…PB and bacon. I am not going to knock it because I love PB on random things too. Two of my favorite sandwiches are PB and Swiss cheese and PB and tomato. So, PB and bacon doesn’t sound so far-fetched! haha!

  9. I always wanted to be involved in Television, still kind of do even though that’s no where near my major :-)
    And that little boy has got it so right–one of my favorite oatmeal combos in pumpkin oatmeal with mighty maple peanut butter and tempeh bacon. It’s really good!

  10. 2nd grade Mrs. Davis’ class I stunned everyone in my small, southern town with Movie star! I guess that gig did not work out tho’ I’d love to be Reese Witherspoon’s body double! The green raw pumpkin seeds are called something and I can not think of it? Can you?

  11. Your breakfast in a jar is perfection girl!!!!!!!! Loving it and loving your dinner dish too!!!!!

    I never tried Bacon on my PB& J, Im not a bacon eater but If I did try it I would use my fake bacon!!!!! That would be a good way!!

  12. I wanted to be a veterinarian when I grew up. I loved animals. Still do. ;D I LOVE bacon! Genius! I prolly don’t belong in this company of vegans and health nuts. ;D Sounds delish to me!
