I can’t listen to your story until…

Started off this morning early with a 60 minute yoga class from Yoga Today – it was for beginners – and I consider myself a complete beginner – but I was a little frustrated because it was too easy. I kept going because I was waiting for the challenging part, but it never came. Boo.

However, a less than challenging workout never stopped me from eating a big breakfast.

On the menu today was Oats in a Jar (OIAJ)

In this jar:

  • ½ cup rolled oats (cooked in 1 cup water)
  • ¼ cup plain yogurt
  • Drizzle of agave nectar
  • Sprinkle of blueberry flax granola
  • I’m guessing about a tbs. sun butter left in the jar

And I was still hungry afterwards, so I partially re-filled the jar with a little puffed rice and vanilla soy milk – just to take up room in my stomach

Probably about 4 bites total. And yes, I wear gloves when I eat breakfast – my hands are always popsicles.

However, I discovered that my second breakfast was in vain when I got to school, because two wonderfully thoughtful  parents brought me lattes.

Yup, I drank both the lattes and left the coffee from home sitting at my desk all day. I’m such a lucky duck. This fueled me through the morning without my usual snack at 10am. I guess a latte is a snack, really.

Lunch was phenomenal.

Spinach, chickpeas, ½ a sweet potato, a Gardenburger and spicy mustard.

Amazingly enough, I was hungry again at 2pm (I eat my lunch at 11:20)…so I snacked.

Pita Crisps + A Pink Lady

Then at 5pm, I had a big handful of cashews…

I ate these while I browsed the class schedule at Lifetime Fitness. Meeker and I are not really in a financial position to join a gym, but a sweet mom in my class (Tona) brought me a 7 Day Pass with my latte this morning.

(Tona, brings me so much food, she probably thought I needed to go work it off at the gym…haha. Only kidding, Tona…I’m so excited about this, I miss spinning!!)

I thanked myself when I came home for dinner and remembered that I had already made it in the crock pot!

Tangy Crock Pot Chicken

Ooh, it was so yummy. The chicken was so tender it was falling apart. Plus, it had a fantastic tangy, sweet combo going on.

Tomorrow is a Vegan Thursday and I’m excited.

I’ll leave you with…

Highlights from the 3rd grade world

  • I had a student get a paper cut on his eyeball today. Well, if that doesn’t make you cringe….
  • Another student (you know, the ex-Chinese one…) smashed her middle finger today, and while she was telling me the two-minute story of how it happened, she was flipping me off. I was trying desperately to suppress my laughter (so mature) but I finally told her that I couldn’t listen to her story until she put her middle finger down.

  1. Paper cut on eyeball?!? OMG girl – that is like one of my worst fears!

  2. Evan Thomas says:

Wow, the parents in that class are so nice!
And I was just thinking how I’m hardly done breakfast at 11:20, but then again, I’m not up at 4:30 either, haha

Teaching and eating: two things I could do for a living without having to remind myself of why I’m doing it. Except for third graders (teaching, that is) and vegan (eating, of course).

I had a middle finger extended my way today, but it had not been smashed. I’m sure I at least chuckled, and reminded myself why it is I do what I do.

Enjoyed the post; I won’t post pictures of my lunch or dinner in reply. There’s nothing exciting about a ham sandwich or spaghetti, unless you’re famished when you eat them, which I was.

Hi, Katie – love the stories from your classroom. I still play tennis, and my club (Lynmar) was sold to Lifetime Fitness. They are currently taking a building break here in the Springs, but I understand the club near you is really nice – maybe not too expensive! I checked out sunbutter, and it’s got way too many calories for me, but it still looks so good!

  5. Aww sweet parents… treating a sweet girl ;)

  6. Brenda says:

Your third grade stories were lol!!!! Jack thought the Tangy Chicken looked good….. love you

  7. Leah says:

I love classroom stories! I used to help my mom in her class on my days off (grade 4). I was helping this boy with his wild animal project and he told me the animal was nocturnal. I asked him what that meant-nothing. So I asked him when the animal hunts – he look at me and says “thursdays?” Lol they’re just so funny!

  8. brianna says:

honestly the kids in your class have THE best parents! Ugh paper cut on the eyeball super nast!

  9. Caroline says:

That crock pot chicken looks awesome, I love carrots cooked in the crock! Also your new font for the “3rd Grade” section is perfect. I love hearing about your “ex-chinese” student. Score on the free gym pass too! I am with you on not being able to afford it right now, I haven’t been to Yoga since Christmas because I haven’t really recovered finacially yet!

  10. What a special treat!! :D

The stories you share about the kids in your class always make me laugh (and cringe…papercut on the eyeball? Oh gosh, I had no idea that was even possible!)

Enjoy the 7-day gym membership!! I’m with you on not being able to afford a gym, but it’s always fun to go when free passes come along. :D

  11. Tona says:

Middle finger….get me off the floor! That and can I grow up gay last week ….cracked me up! I needed a laugh b/c 530spin was full! But there were 3 bikes w/out straps that the bike shoe folks could have used! Err I did work out. Hey my latte was LOW calorie….use the pass but don’t give in…when you do join push them on all free, discounted everything! You might wait until the New Year’s folks die down at the gym…

  12. Lee says:

I love hearing your 3rd grade stories!

A co-worker of mine got a paper cut on her eyeball a few months ago. I have no idea how.

  13. Ally says:

It sounds like your class has some of the best parents! Coffee, gym passes….no wonder you love your job!

  14. Kelly says:

I love your stories about the kids! They always make me laugh and start my morning off right! Thanks for being so delightful!

  15. I’ve poked myself in the eye with a safety pin before – sucks.

I always get so antsy about free food. I have a “plan” in my head of how my eating schedule should be but when something free arrives in the office I get all thrown off. I will even go so far as to decline a free lunch because I’ve already packed my own “pre-planned” meal. Stupid. I need to get over this…

  16. I am totally trying your “Tangy Crock Pot Chicken” on Monday…….not only did I need a good meal for the holiday I also needed a good chicken meal as both my husband and daughter (a fellow 3rd Grader) are extremely picky and even pickier when it comes to chicken!

Neither of them like fat on any meat, yes I know this is a good thing but can be difficult at times as “fat” is on all meats, at least the ones I can afford, so any recipe that calls for Skinless/Boneless Chicken Breasts, is good and easy to make is right up my alley!

    Thank you. =)

  17. So sweet that you got lattes AND gym passes today! Definitely makes up for the eyeball papercut, right? ;-)

  18. OMG paper cut on her eyeBALL…how does that even happen!?!?

that is SO ncei of the parents to get you the latte’s!

i still remember the story when you said there was a black thong found in the playground…i still ponder how that happened….

  19. lowandbhold says:

Haha, that’s so funny. Kids are hilarious. And yay for the free lattes. Major score!

  20. homecookedem says:

Ok, so why do I not get any free snacks or treats from my kids?!!!!! A mom brought me homemade soup when I was sick last year, but that’s the only thing I can remember besides Christmas and the end of the year!! :( Maybe our student population “types” are different??

  21. janetha says:

thank god you drank all 3 coffees. atta girl!!! kids are rad, end of story.

  22. plamarie says:

That is soo sweet that parents bring you coffee. I consider a latte a snack sometimes, just all depends. I love sunbutter and have been curious to try Trader Joe’s. OIAJ, such a rewarding treat ;)
