Favorite day of the week + vegan eats…here’s how it went.

One banana + peanut butter + fig spread + puffed rice

Avocado + cabbage + hummus wrap



Cheery tangelo


Soy latte while kids were at art


Two dates while grading


Savory oats


½ cup oats + cooked broccoli + chickpeas + cooked carrots + hummus + salsa + hot sauce


Success!

Tomorrow is Friday and I’m off to revel in the anticipation.

    • Ah, the tip – I’ve found by trial and error – is to add something gooey. Hummus, cheese, egg (with runny yolk), salsa…something that makes it all kind of “goo” together. That really does it for me!
