Let’s hear it for Thursday. It’s my favorite day of the week because the weekend is just around the corner. Everyone is anticipating Friday, and the day just seems so manageable.
Especially when you start it off with a breakfast like this.

Savory Oats – ½ cup oats, cheddar cheese, salsa, hummus, siracha, an egg.
This filled my belly almost all day, which is highly unusual for me. I snacked on some applesauce and cottage cheese around lunchtime, but otherwise…that heck-of-a-breakfast really held me over.
Dinner, my friends, was cake. Because I do what I want.

Meeker is fond of pointing out that I have a blog dedicated to
cake, but rarely make it. (I don’t know why he cares, he doesn’t even like sweets) Well, tonight I decided that there would be cake. And after two pieces of this messy applesauce cake – I decided that I couldn’t be bothered to fix a real dinner. What better way to celebrate a Thursday?
The cake didn’t come out of the pan as easily as I had anticipated. In fact, I pretty much had to rip it out of the pan – in two pieces. Next time I will be sure to line the bottom with parchment paper – but until next time, I’m enjoying this delicious mess topped with a powdered sugar glaze.

Did I eat any vegetables today? Not one. Could I have made the cake healthier? Yup. Did I love it just the way it was? You betcha. There are plenty of days when I all I want to eat is broccoli, so I don’t feel the slightest bit guilty for wanting cake for a meal. It’s all about balance in my book.

Great ending! What’s the point of vegging out on veggies but never inhaling cake? balance is key
I love you, based purely on this blog post.
Thursdays are my fave day too!!
And I didn’t eat any veggies either!!!
You know what, sometimes even “healthy” eaters need to eat cake for dinner!! There was many time when I was growing up and my mom would let us have Blizzards for dinner!! I know it wasnt a Healthy choice, but we didnt eat fast food meals and it was the only treat we would get!!
Have a great Friday!! Its almost the weekend!!8)
YUMMM!! Your cake looks so moist and delicious!! And in my book, “healthy” is being able to balance and that is exactly what you do. One day without veggies is no big deal – at all!
Balance really is the key! Awesome post.
It looks good! I needed that yesterday with the horrid day I endured….tonight I had two Back to Nature cookies and a skim chai…it felt good!
savory oats! youve got me craving them now. that cake looks so moist~ to die for!
But what did poor Meeker have for dinner?
I haven’t had savory oats in far too long. They shall appear very soon. The cake sounds amazing!
Ok, not sure I could do the egg on my oat meal but you know I will try it..what is siracha? Also, do you make your hummus? I usually do but during the summer when I have time and was wondering what one you like?? Hope you enjoyed your day!!
Sometimes you gotta “do what you want” and eat cake (or cupcakes) for dinner!
YAY for having cake for dinner!! I wont lie – Ive eaten ice cream for dinner, and why not? As long as its not a regular occurance what harm could it do?
Also – savory oats are my favorite thing, and yours look SO good!!
that egg is freakin’ perfect! and that cake. Oooh, that cake!
YA for cake!! Im sure you will get your veggies at some point.. no stressin!
Happy Friday!!
Balance is key, you’re absolutely right!
I nominated you for the Beautiful Blogger Award on my blog, just to let you know! I’ve always enjoyed your blog and you definitely deservie it.
Happy FRIDAY!
Perfect summary at the end of your blog! Cake for dinner is a great option every once in a while when you eat so healthy all the time. Love it!
EXACTLY!!! I love that you had cake for dinner!! I think it is important to show people that ANYTHING (and yes I mean ANYTHING) can be eaten in moderation with an active lifestyle! You go girl…embrace that cake! (oh and can you overnight me a piece…haha!)

Oh, I’m so happy to see that you not only eat cake but that you have it for supper. Good for you! Everyone needs a cake-only meal every now and then (some of us more than others). And that cake looks truly scrum.
