I woke up to an extra special delivery!

Mix 1 sent me a case of smoothies to try! I had tried these before at the Denver Marathon, and really liked them – so I am very excited to try all the different varieties.

This company is local (Boulder, CO) and has some pretty good stats:

If you, like me, are wondering what Luo Han Guo is, check it out…it is a longevity fruit from China, and is apparently 300 times sweeter than sugar. I like sweet things.

I’ve yet to try any of my new shipment, but I assure you that I will let you know when I do.

For breakfast, I had cake and coffee, before an hour long skype date with my best friend.

If you’ve read my about pageyou already know that I think cake is a perfectly legitimate choice for breakfast.

Around lunctime, I snacked on some sweet potatos – sliced thinly, seasoned with salt, garlic, and chili powder and cooked at 400* for about 30 minutes.

Then, the best part of the day…my parents came over to make pizza!!

My mama baked a cake. If there was ever any question as to where I inherited my sweet tooth, here she is…

The cake was so simple. Just four ingredients: egg whites, cocoa, powdered sugar, cinnamon. That’s all.

  1. Thanks for letting us invade your kitchen! The meal WAS colorful and delicious….. The cake was very chocolately, moist, and delicious…. best of all pretty guilt-free! I will definitly do it again. It might be nice to have a little piece for breakfast with some freshly brewed strong coffee…. heh heh. Love you guys!

  2. Can you post the amounts for the cake…I have GFree cocoa too. My macaroon babies were bit crumbly so added tsp water and rolled them out…..ooh good! I put them in the fridge. I finally found Artisan coconut butter at VCottage…its good! I could make that cake tomorrow for our cousins dinner…ooh sprinkle with powdered sugar!!

  3. I have never seen those mix 1 drinks, even the entire time i lived in Boulder last summer! Are they really new? Let me which ends up being your favorite and i will have to track one down when i get out to my dads! :)

  4. I want to make that cake!! Do you happen to have the measurements? If not, no big deal… but I’d love to make that for Andrew for Valentine’s Day since it’s gluten free!!!!! :)

  5. Aww, my dad makes pizza too :) Whenever I do, it’s great, but it’s still not as good as his! There must be some added love in there!

  6. ok ok I’m SOLD on your applesauce cake – it’s in the oven right now! I love cake for breakfast – I just call it “coffee cake”. See how that works? I’ll let you know the out come of the cake after I eat a piece (or two!).

  7. I love those Mix drinks! The protein ones are really tasty and filling after a workout. My favorite is the purple one, I think it’s berry vanilla?

    How do your rents like being put on your blog? My mom keeps telling me what I should and shouldn’t add and then is trying to adjust my meals so they look better in photos– so funny, I just roll my eyes!

  13. I’m always looking for a way to spice up my sweet potatoes, yours sound good! (I recently learned that anything with a vibrant orange color can help your skin, so I’ve been eating quite a few lately!) And I’m SO jealous of your homemade pizza and dessert! It looks so yummy, yet simple. I always say I’m going to make a homemade pizza and I never do—you’ve inspired me.
