Sunday Productivity

My new goal is to not watch TV on Sundays (I started last week), and it’s kind of unbelievable how productive I am…embarrassing, really. I didn’t realize how much time the tube was sucking out of my weekends. This morning, breakfast was eaten in the car on the way to church. Two leftover pancakes, sandwiched … Continue reading »

Veggie and Texas Blondies

After my rather indulgent breakfast, I wanted some veggie love for lunch. Roasted zucchini and toasted chickpeas. I roasted the zucchini at 450* for 30 minutes, flipping half way through. The chickpeas were toasted in a pan with non-stick spray, salt, pepper and chili powder. Y-u-m. For my lunch dessert I had a date with … Continue reading »

No Such Thing

When the students in my class asked me what I wanted for Christmas, I had the same answer every time. “There is no such thing as too many Starbucks cards” They’re pretty good listeners. I took my cards this morning (really, I only needed one) and went to Starbucks for a grande latte before running … Continue reading »

Please End

Can this week be over already? I’m going to make this short and sweet because I’m exhausted. I’m actually still at work – doing my second job – which is answering phones in the office. A little more pay tacked on to a teacher’s salary is always a good thing, but on a Friday night, … Continue reading »

When I grow up…

First of all, thank you all so much for your incredibly kind comments about the student who transferred out of my class on Tuesday. I can’t tell you how much they meant to me. It sure has been a crazy couple of days. Last night, I came home and literally fell into bed, and slept … Continue reading »

Cooking Up Some Love

Kids were nuts today. It was such an eventful day in 3rd grade…details at the end of the post. Breakfast snack plate Banana and sun butter/chocolate chips, hardboiled egg, Clementine. Lunch – leftover black beans and quinoa. Snack – carrots and a hardboiled eggy Then, I left work early – around 4:30pm (glory, glory hallelujah!), … Continue reading »

New Semester, New Recipe

Hello and happy Monday! My first day back at school was just fine. I couldn’t sleep last night – and I finally ended up getting out of bed at 4am to clip Punky’s nails because she was pacing and the nails were clicking and it was annoying the heck out of me as I tried … Continue reading »

Back to Reality

The other half of my Sunday was so productive that I hardly thought about the fact that I have to start work again tomorrow. After an extra wonderful church service, Meeker and I went to his parents to scrounge up some lunch. My eyes were way bigger than my stomach here. I ate the salad, … Continue reading »

Anyone wanna go halvsies on a pie?

Can anyone guess where I pulled my title from? Hint: think comedian I unintentionally split everything I did/ate this morning into halves – I honestly didn’t think about it until I sat down to write this post. I started off with half a Luna bar Then did half of a yoga class (30 minutes) from … Continue reading »

A Sundry Saturday

The morning was spent cleaning, coffee drinking and walking, while the afternoon was spent shopping and eating. Not long after my pumpkin latte, I made a tuna-salad-inspired tempeh lunch. I boiled the frozen tempeh, drained it, and mashed it with light mayo, spicy mustard, soy sauce, ½ avocado, dill, celery seed and dried onions. Then … Continue reading »
