First of all, thank you all so much for sharing your mistaken lyrics with me last night! I died laughing at so many of them. I realized that I forgot to mention Meeker’s family favorite…his mom and sister used to think that the Christmas song “Emanuel, God with us” said “Emanuel, Gar-Ga-Schmell” – hilarious nonsense.
But my favorite lyrical mistake was from Katie who thought that Nelly’s “Ride Wit Me,” which contains the line “Must be the money” was “Bugs be the bunny.” I laughed about every time it popped into my head today.
On to food…
Today was (mostly) vegan Thursday.
It started with a green monster –
- 1 apple
- 1 Clementine
- 3/4 cup spinach (frozen and thawed)
- 2-3 cups water
- 1 tbs. flax seed
I drank this early this morning while I prepared dinner to go in the crockpot…best idea I’ve ever had.
I also had two pieces of ww toast with almond butter about an hour later. (By the way, this bread I just bought is so yummy – cracked wheat. It only has five ingredients!)
At lunchtime, I had another hummus/veggie sandwich and some carrots. Eaten alongside the ever-present mug of hot water.
Today’s sandwich was hummus and a quarter of a red bell pepper. My lunches have been pretty lackluster this week.
I also had some strawberry applesauce and two clementines throughout the afternoon.
Then the un-vegan part of my day came around 4pm while I did some office work…
A new bar!
My bestie recommend these to me (unlike myself, she’s a protein junkie) – and I really liked it! About halfway though I realized it had “milk byproducts” in it – which I assume is whey protein or something. So much for the vegan streak. However, I’m glad to have found a new bar that I liked.
When I came home and spelled dinner already finished in the Crockpot – I thanked myself 100 times. I was so hungry and tired today, and I don’t think I could have rustled up anything healthy/creative after the long day.
Caroline’s Sweet Potato Peanut Butter Stew – I modified a little, just based on availability of ingredients in my kitchen.
- 2 sweet potatoes, chopped into 3/4 inch cubes
- 1.5 yellow onions, diced
- 1 can of black, drained and rinsed
- 1 can of diced fire roasted tomatoes, do not drain
- 3 cups of water
- salt and pepper
- 2 tablespoons cumin
- 2 tablespoons cinnamon
- 2 tbs. chunky peanut butter – added after cooking
This was the most hearty, satisfying (and still vegan!) meal I’ve had in a while. All the flavors worked so well together, and it worked really well in the crock pot. Thanks Caroline!
Tomorrow is Friday, and I’m going to bed early. But before that, I think I’ll whip up a batch of vanilla cream mousse to round out this (mostly) vegan day.
I oohed and ahhed over the stew on her blog, and now I’m doing it all over again on yours lol!

I really liked the Think Thin bars too – but do they have alot of sugar alcohols in them?? I thought I remember them having alot of stuff in them..?
Oh WOW!! That stew looks so yummy!! I just got our crock pot ready for our dinner tonight, so I know I’ll be thanking myself too after a long day of work! Gotta love the crock pot! HAPPY FRIDAY!!

What’s the brand of the bread? I love short ingredient lists and it looks so delicious smothered in almond butter. Once again, I need to start consulting your blog BEFORE I eat!
And you can NEVER go wrong with hummus and veggies – it’s one of my favorite meals and I actually seriously contemplated having it today but I went with a different variation!
Also – SO WEIRD that you just featured the Think Thin bar. My co-worker (who is gluten-free) and I were JUST talking about those bars. I’ve tried it once and a really long time ago so maybe I need to try it again, but I wasn’t a huge fan of it…I may need to revisit that in lieu of your review.

Another delicious day. That stew looks amazing, tho I would substitute regular ol’ not-that-healthy taters for the sweeties.
I have actually been trying new healthy foods, thanks to your site. TOFU! I made it in a stirfry with broccoli and mushrooms. Success! ALMOND BUTTER! Er, not such a success. “Nut” butters are a weird food for me, and MUST, apparently, be Skippy peanut butter — no other brand or type will do.
But at least I tried.
The green monster is next on my list.

Oh that is a stew I must try! I tried that Think Thin bar and I really, really disliked it- funny how tastes can be so different.
