Olive Oyl

I already gushed over my breakfast, so I’ll jump right in with the mid-day yummies.

The best kind of lunch: leftovers.



This sweet potato stew is still outstanding. Maybe even better the second day.

Then mid afternoon I snacked on a handful of peanut butter cup trail mix and then later, two clementines.

No, the title doesn’t refer not olive oil, like the kind Rachael Ray bathes in. But rather, this gal…

This is what the office staff at my school has started calling me. Let me explain. Green Monsters have become the latest craze at my school. And when I say latest craze, I really mean that another teacher and I (hi Kristin!!) have started drinking them during the school hours. The office staff is completely and utterly disgusted by the spinach in the smoothies. At first, my nickname was “spinach girl” and now it’s progressed to Olive Oyl. In fact, the office called me today and said “Hey Olive Oyl, you have some parents here to meet with you, can I send them down?” – I laughed and then wondered what those poor parents probably thought of their child’s teacher…

Anyway, I don’t mind the nickname. In fact, I really like it. It’s not easy being green.

    Haha, I love that you’ve spread the green monster love. I still can’t get myself to eat one–no thank you, Ms. Oyl. I did one day see what I think was someone else on campus eating OIAJ once(!!). That made me really happy

    I am warming up to the green monster concept… I think I need to tweak my recipe a bit but I love the idea of it! I thinks it’s cute that they call you Olive Oyl!

    You do not look like her at all….but I get the spinach take on it. I made tofu mousse for my friends kiddos tonight and they LOVED it. Then we had a ready made Persian salad that I added apples too! oh and apples, oats/trail mix(that I made you), greek yogurt, honey and strawberries..YUMMY!
    In Boise they have a place call Debbie’s and you’d love it…Hummus wraps, salad, soups….$3. each I had spicy turkey kiebalsa corn chowder and feta spinach salad $5.63 and it was filling!!! Enjoy your green monsters….I drink mine from a powder!! eeek!

    Haha. That is a great nickname! At work, there are a bunch of older women (60s) that come in to swim every morning and they often bring me veggies from their garden because they see me eating them all the time. Unfortunately, somehow this was misconstrued and i wound up with the nickname cougar-bate by my ever so subtle co-workers. So embrace Olive Oyl as much as possible! If you really want to freak the kids out one day you should make enough for the whole class and turn them all into little health nuts! By the way… i had a chance to check out the Sprouts website and i am pretty impressed! I am assuming the bulk section there is pretty elaborate, and apparently they are building one in one of my old neighborhoods (Smoky Hill Area)…

    Haha!! Love it!! No one at my school eats like I do. So sad I know. People never even compliment my eating habits… they mostly just look at me weird and say, “what’s THAT??” And then when I tell them they say something to the tune of, “looks interesting…” while still looking at me like I’ve got dirty panties on my head.

    Lol, my brother calls me popye for how fast I can go through a bag of spinach, generally by making green monsters.
    Your meals look yummy.
    Also I love that you are a teacher and you add a little note sometimes on what your kids have done or said, they seem adorable.
