Things I Love

In honor of Valentine’s Day, here are some things I love:

Trail Mix + four yogurt covered pretzels for breakfast


Bellatrix loves all people food…including trail mix.


She ate the chocolate chips I left in the bowl


Plus coffee



Taco salad for lunch


Last week, I saw Angie bake her tortilla at 400* for 20 minutes, so I copied her. Genius.


Then a started in on the baking – first up, a recipe I made inspired by Averie’s raw donut holes!

(Almost) Raw Vegan Flax Cookies


I had to change it based on ingredients we had on hand, so you can find my recipe here.

Since Meeker LOVES his chocolate chip cookies, I whipped up a batch of those too.


I also love winter walks when the sun is shining…

and this stream by our house.


As well as this boy and his dog.


Then I ate some of my favorite foods for dinner.


Baked sweet potato rounds, dipped in peanut butter + mashed cauliflower


I thinly sliced the sweet ‘tater, sprinkled with cinnamon, nutmeg and salt, and then baked 15 minutes on each side at 400* – then dipped in peanut butter. There is nothing better.

For the cauliflower mash, I steamed one head of cauliflower, then dropped it in the blender, added ½ cup of milk, 1 tbs. butter, salt, and blended until smooth. Waaay better than mashed potatoes. I’m serious.

  1. I cannot stop at 4 yogurt covered pretzels! I’m impressed ;) And I’ve never thought to dip sweet potatoes into peanut butter; I’ve always been a ketchup or bbq sauce girl

    Today I loved eating a delicious brunch and watching a movie with a good friend.

    Those cookies, both vegan and not, look delicious!

  3. I loved seeing Canada win their first Gold on home turf today (yesterday- I’m just a bit behind).

    How cute is your cat? I think we may have twins..yours can win for cuteness- mine meows non stop

  4. Sweet potato and peanut butter? Just like the baked tortilla, this too is a genius idea my friend. I probably would love that combo!

    I loved having a lazy day with my man yesterday and cooking and baking together. :)

  5. I loved the fact that the heart-shaped cookie i made for my valentine was more pear shaped and the fact that it didn’t matter! haha. Baking is not my strong point but if it was i would make an attempt at those balls you made! They look so neat! I don’t think i have ever had a pet who didn’t enjoy chocolate, but if they ate trail mix that would be awesome! I told my dad to go check out Sprouts! He is to report back to me soon!

  6. I love mashed cauliflower! I MUCH prefer it over mashed potatoes – it’s so much smoother and creamier, and has so much more flavor! Usually I just add a little olive oil to mine… and it’s great with some goat cheese or feta too :)
