My morning was rushed because I was creating breakfast and dinner at the same time – I hardly ever crave things for breakfast, but this morning, my tummy was begging for oatmeal.

½ cup oats (cooked in water), 1 cumbled oatie, pumpkin flax granola, almond butter, 2-3 tbs. vanilla soy milk
So dang good. Exactly what my belly wanted.
Mid morning, I was surprised with a latte from a wonderful mom

It was a good day for a latte. Every day is a good day for a latte, really. Especially when it’s free – thanks Tona!
When lunchtime rolled around, I was ready for my big fat salad.

Look at that vibrant color! I love all things red – it’s such a warm color.
- Broccoli slaw
- Red bell pepper
- Carrots
- Salsa
- Tiny little chicken tender way in the blurry background
Then around 4:30pm – I had the most fantastic snack while grading. I started with coconut yogurt…

Then added granola and walnut butter

Oh.my.word this was delicious. That walnut butter is the best thing around.
Dinner might look familiar…

This is exactly what my lunch was – but with the subtraction of chicken, and the addition of ground turkey. Cooked in the crock pot all the live-long day. This morning, I browned the turkey, then added it to all the yummy veggies and cooked on low while I was at work. I just love coming home to a hot meal. Thank the Lord for crock pots.
In the 3rd grade world…
Today was a pretty somber day because there was a school shooting in our area yesterday. However, I have a student who always manages to lighten the mood – no matter what the situation.
It started when a boy was telling the class that he was going to kill his brother for stealing his after-school snack (kind of funny in its own right…). A classmate who was listening to this exclaimed…
“You can’t kill your brother…you’ll have to go to jubilee!”
“Uh, jubilee…?” I asked questioningly
“Yeah, you know the place that kids under 18 go to jail”
“Oh..you mean ‘juvie’ – juvenile detention. ”
I will be calling it jubilee from this point forward.



I have yet to try coconut yogurt but I soooo want to! AND I have that walnut butter in my stash. Perfect
Jubilee sounds a lot more appealing than juvie… but yeah, probably best to avoid it either way you say it

Walnut butter is one of my favorite nut butters. Well, okay, I love them all, but Walnut is soooo good!

That’s interesting to read about the somber mood in your classroom today. I always wonder at what age do kids “get it.” I guess they always struggle a bit. A student at my school
got into a bad accident in December, spent a few weeks in a coma, and is still in ICU. It’s been difficult to watch the kids work through it. I never quite know when and how to give guidance. We teach more than just math and reading, you know?
Oh my gosh- coconut milk yogurt?! Have I been living under a rock? That sounds amazing, and I already love coconut milk ice cream.. I’m going to need to scope out the grocery stores here… I wonder if TJ’s (my go-to store) would have them…
I am the opposite btw- I ALWAYS crave bfast. My fav meal of the day.

I seriously can’t read any more of your posts until i find a way to score some Walnut butter. I’m thinking about just attempting to make it myself, which may be a really bad idea… That is pretty sad what happened at Deer Creek, the math teacher is such a hero though, gave me goosebumps listening to his story! You must be the world’s best teacher the way the mothers in the class treat you! And to think, if you ever decided teaching was not for you any more, professional meal planner/photographer is definitely an option! And i even learned a fact about palm trees from your yogurt container!

Is it crazy that I am surprised that a 3rd grader even knew what “juvie” was? I definitely didn’t know that word in thrid grade! Ah…times are a changin!!
Kids these days… they’re so smart! (I sound like a grandma, don’t I?) They’re always listening when you think that they’re NOT listening- it must be really interesting to work w/ them!
Every time I see that coconut milk yogurt on your blog, I remind myself to pick some up at the store. Then, I get to the store, and it’s like $3.50 a container! Do you ever find it on sale? I think I’m just going to bite the bullet and try one!
So scary to read about the shooting in your area, but I’m glad you and all your kiddies are safe! Hopefully they send the shooter straight to jubilee and he stays there for a long time.

Stories like that make me wish I was majoring in elementary education, instead of French. Hopefully I’ll still be teaching, but I feel like high schoolers have far fewer funny slipups!

I have never commented before but I just wanted to let you know how much I love, love, LOVE your stories from the 3rd grade world! My older sister is also a third grade teacher and I always tell her anytime you post a little story. I too find the spelling errors kids make so funny, not in a “they’re dumb” kind of way, its just cute

I have GOT to find me some coconut yogurt! Just thinking about it is making my mouth water…and there are a million different ways I could use it running through my head (i.e. made into fro-yo with dark chocolate chips, ahh!).

LOL one time my broter and i were fighting in the backseat of the car and my mom drove us to the “jubilee” parking lot and threatened to dump us there. no wonder i’m in therapy
