Blueberry ‘Stache

I started this morning with the best green monster I’ve ever had.

I just keep adding liquid or fruit until I get the consistency that I like. This was so dang good and it kept me full for FIVE hours. That never happens, folks.

  • Vanilla soy milk
  • Frozen raspberries
  • Frozen banana
  • Vanilla protein powder
  • Lotsa spinach
  • Water
  • Big spoonful of peanut butter

For lunch, the fantastic parents at my school threw us a staff lunch. They do this on the last Thursday of every month, and I am constantly looking forward to it. Here was my plate today:

2 wraps, carrots, celery (x4), lil’ smoky sausages. If nothing else, my diet has variety.

For snack, I had the last of my mix 1 smoothies

I drank half before I worked out, and half after. ‘Twas perfect.

After school, some teachers and I did a turbo jam DVD in the school gym – it was fun and I felt adequately exercised and very energetic afterwards. So much so, that I came home and took Punky for a walk in the freshly falling snow. Can I just say that I am so beyond ready for summertime?? I miss my sweaty mid-morning runs so much that it hurts. However, the chilly walk was kind of fun – I like big snowflakes, and I usually like my dog.

Dinner…

Thinned out pancakes (crepes) with plain yogurt, cinnamon, coconut and a sprinkling of trail mix. I had this plate x3 – heck yeah. I made this for two reasons:

  1. They sounded insanely delicious and I love breakfast for dinner
  2. I really want to win some Artisana goodies

In the 3rd grade world…

Some parent sent their little angel to school with a brand new set of smelly markers. They were such a hit; the kiddos were trying to trade and finagle for them all day. One smart boy quickly snatched a marker and drew a blue blob right under his nose so that he could smell blueberries all day. Not a bad idea if you are eight and have no pride. But little did the “marker snatcher” (or any of the kids) know that he resembled a blueberry version of Adolf Hitler.

  1. How funny!! Love your 3rd grade stories…. I can certainly picture the scene today. The crepes look like they were delicious!

  2. In hopes that i might be able to practice the “less is more” theory tomorrow morning, i have made the decision that i will copycat your green monster and put NOTHING else in it besides your ingredients! I don’t know if you understand how big of a deal that would be for me if i go through with it… I have never followed a recipe to the T, but i will make an attempt based on how delicious that sounds! I am on a huge fruit kick lately (past 2 years, pretty much). Also have to thank you for not flaunting the Walnut butter today, i wasn’t going to even mention it because i get upset with Canada every time i see a Walnut now. And I bet you the little blueberry Hitler likes “juice” so the nickname would be kind of contradictory? Okay, that joke was probably a little off color, but it seems my whole day has been that way, so why not? Plus my dad is jewish, so i think it’s okay ;)

  3. Ugh – I SO hear you on the being ready for summertime. I was JUST thinking that this morning as I did yoga. The instructor is in this tropical setting on the DVD and it makes me so jealous!

That dinner looks incredibly delicious – I hope you get some nut butter out it! I’d vote for ya ;)

Also – HAHA. I LOVED the marker story – that kid is really creative and I agree, when you’re 8 and have no pride, why not go for it?!

    HAPPY FRIDAY FRIEND!

  4. J’adore crepes!! I should try eating them with plain yogurt and cinnamon that sounds fantastic! My favorite way is of course with nutella and banana. So sinfully good :)

  5. HILARIOUS! I am sitting here cracking up thinking about a little boy with a big blue blob under his nose! :) Thanks for starting my day off right, Katie! Happy Friday!!

  6. This is going to sound insane, but I’m not ready for summer yet! It’s never THAT cold in GA, but it does get THAT hot here, if that makes any sense. (You get the snow; we get the heat wave!)

Those crepes look delicious… I’ve never thought to just thin out pancake mix in order to make crepes at home! I would probably throw a little Nutella on them. :)

  7. That even sounds like the best green monster ever- I really need to try one of those.
Do you mind posting your recipe for the pancakes you made yesterday? Those look really yummy!

Have a good day, Miss Katie! :)

  8. Your breakfast sounds so delicious, and fulfilling :) My favorite fruit is raspberries!!! so your breakfast treat is perfect for me :) I think I’m going to have to try it soon.
Also I love your daily little tid bits from work :) always puts a smile on my face :)
    Have a Good day :) *

  9. You. Have. Turbo Jam?!?!?????????

I’ve almost bought that on several occasions- usually after some wine while I’m cruising the dvd section of amazon.com, but seriously- do you love it? or is it lame?

  10. Mmm…a green monster that keeps you full for 5 hours? That sounds perfect. :D

I’m loving the current snowfall that we had, just because it’s absolutely gorgeous outside. But once the newness of it wears away, I’ll be heavily anticipating spring too. I can’t wait for flip flop and biking/running weather. :D

  11. It sounds like you have the best parents at your school! You always seem to be getting goodies from them, very cool! I still haven’t figured out the green monster yet but am going to keep trying-they just look so good and so healthy.
