Monday was full. Full of snow, chaos, laughter, work and yummy food. I started with two full mugs.
On the left is coffee (duh) and the right is a green monster:
- Chocolate protein powder
- Spoonful of peanut butter
This liquid held me over nicely until about 11am (4 hours) whereupon I dug into a yummy bar
A little calorie dense for my liking, but oh so tasty and peanut buttery – it really was like a meal rather than a snack. However, I only get one lunch break, so I ate my lunch about 20 minutes later, even though I wasn’t starving.
Broccoli slaw, carrots, celery with ranch
ww pita with cream cheese…peanut butter would have been more satisfying. Meh, live and learn.
I also snacked on my weight in trail mix all day long, which meant I wasn’t too hungry for dinner either. But I was craving veggies…as I usually am. That is when I’m not craving cake.
Roasted cauliflower, sweet potato, brussles sprouts roasted at 425* for 35 minutes
Oh, and then I doused them in cheese sauce – to die for.
The sauce was:
- Mozzarella cheese (actually string cheese cut up)
I first warmed the milk, then added the cheese, mustard and seasonings and whisked until all combined. Except it never got all combined and I was left with melty cheese and thick milk. Suggestions? I don’t really love cheese that much, and I don’t cook with it that often, so I’m kind of at a loss. Why didn’t it come together? Oh well…it tasted yummy.
Now I’m off to watch Jake (the painfully cheesy bachelor) pick either the perfect Tenley or the troll Vienna. If he picks Vienna I will stop watching the show. Unless of course that means that Tenley is the next bachelorette. In that case, I’ll still watch.
