Sun and Shamrocks

I just can’t get enough of that morning sun!

  • 1/3 cup oats (cooked in 2/3 cup water)
  • Drizzle of agave
  • Almonds
  • Walnut butter
  • Coconut

Then at snacktime, I was presented with two lovely apples

My students are so sweet. I get an apple almost daily – and I fail to blog about it because I usually eat it immediately. I had the green one this morning.

Then for lunch, my most recent obsession:

I brought a huge waterbottle with this already made, and it filled this glass x3. It’s the perfect lunch. It fills me up better than anything I ever bring. This morning I blended:

  • 1.5 banana
  • ½ cup unsweetened applesauce
  • Handfuls of spinach
  • Orange
  • Peanut butter
  • 2 scoops chocolate protein powder
  • Milk
  • Water

This pretty much held me allllll afternoon – that’s 7 hours. Crazy. Another factor in that fullness is that I’ve transitioned to working out at night – for several reasons, one of which is that my daily hunger pangs are significantly less. Because of the nature of my job – I can’t really eat when I’m hungry, but rather at my lunch time – which is early and short, and leaves me starving all afternoon. I really miss running in the morning, so we’ll see if this schedule sticks.

I was starving when I got home, so I first grabbed something a little unusual (at least for me)…

Leftover sauerkraut and buffalo sausage. Meeker’s dad killed a buffalo a few weeks ago – so we have a freezer full. It’s pretty good actually. Then I had a sweet potato with mustard and bbq sauce


So flavorful.

Now I’m off to do some pilates before I settle in for the night.

In the 3rd grade world…


Every month, we make and hang seasonal things from the ceiling. It makes my classroom feel cozy. March is my favorite hanging craft, so I have to share.


Colorful shamrocks! One side vibrantly colored, and one side green. Big smiles.

    I work out in the evenings and I always hungry right before bed and ravenous when I wake up! I’ll be curious to see if your hunger migrates!

    Hurray for giant sham rocks!!! with fun colors :) I really need to start making myself some green monsters, but just haven’t had the time or been home for that matter to try to make one. Soon enough.. :)

    I love buffalo and am so jealous you have a freezer full! It’s so good (and good for you) but super expensive here. Enjoy!

    Oh man, you just brought back one of my best childhood memories! Our teacher used to hide gold coins in the classroom the entire month of March up until St. Patrick’s Day, and then whoever had found the most got to pick either a pizza party or a movie day and what movie we would watch! It was awesome, and I WON :) Obviously i picked one of my favorites, Willy Wonka! Your shamrock is completely cool, it looks like your a fun teach!

  9. you teach 3rd grade? wow! i am so impressed, that is a really admirable job. such cute decorations :) . omg, you didn’t eat for 7 hours? i absolutely cannot and WILL NOT do that anymore, i eat every few hours at least!

  10. That smoothie is great- I always have a hard time adjusting my workouts to the evening- I always find a million excuses not to go

    I LOVE decorating my classroom in March! I just put up my shamrock border around my calendar and stepped back in admiration. One of my students said “That looks really nice and springy!” Oh it does, doesn’t it…

    How cute is an apple for the teacher by the way?

    Evening workouts are a challenge b/c they’re normally around dinner time… there’s nothing worse than working out when you’re hungry, which happens to me if I don’t eat a “good” lunch!

  21. awww I miss being in 3rd grade!! lol…love the colorful classroom and decorations, that was always my favorite part! making beautiful pics then having see them up around the class!

    I cannot believe that shake held you over for 7 hours! wowza that must have been one powerful shake LOL it looks delish!!

  23. Love the shamrock! What a great idea. You know I’ve always wondered if I make a green smoothie the night before if it would keep well in the fridge overnight for breakfast… Guess you answered my question! :)

  24. I’d have to say all those apples are a definite perk of being a teacher! How cute :) My dad loves buffalo burgers, but I’ve never tried them. It’s cool that you know where it came from, though!
