Wasabi Monday

I just got wasabi in my eye. Why I thought it was smart to grab a handful of wasabi peas at 5am before putting in my contacts is a mystery to me – but lesson learned.

After flushing my eye with water, I cooked up a nice breakfast for this rainy Monday morning. First, I sautéed dried onion, spinach, and peas.

Then, I added one egg and two egg whites.

Once the egg had set around the edges, I sprinkled it with nutritional yeast, and popped it in a 375* oven for 8 minutes and drank my coffee while it cooked.

Voilà! Served up with a little nub of homemade French bread.

I hope it’s not rainy/snowy where you are and that you have a happy Monday!

  1. Oh I SO feel your pain. I have super sensitive eyes to begin with, and once forgot to wash my hands after I cut a jalapeno and put my contacts in…I basically wanted to die.

That is an insanely impressive Monday morning breakfast! Now I have to go find wasabi peas so I can put them in eggs :D

  3. Wasabi can be such a painful thing, I can’t imagine getting it in the eye…eeks! The first time I tried eating it on top of sushi, I had no idea it was so incredibly hot until I put a big glob in my mouth. I learned my lesson pretty quickly. :D

Your breakfast looks so nutritious and delicious. Yum! :D

  5. Ack, wasabi!! Oh how awful…I’m the worst about touching my eye after things like that. I can’t tell you how often I’ve gotten hot sauce in mine.

Love the breakfast idea and thanks for the tutorial on baking it, I usually get impatient and just make a scramble.

Oh no, hope your eye is ok!! That breakfast looks really, really good!! I’m totally impressed with your before school breakfasts, btw!! I’m always eating my yogurt mess as I’m doing 20 other things at work before school starts. I really wish I could get up earlier!!

I had a similar experience with wasabi peas, except mine involved eating them for dinner and partying WAY TOO HARD on New Year’s Eve. Let’s just say I haven’t eaten them since.
