I know the pancake girl would agree. I like to make a big batch of pancakes on Saturday or Sunday, eat a few, and then freeze the rest. Then when breakfast options are low (as they are now) – I just have to pop a couple of frozen pancakes into the toaster! Nothing could be easier. I topped these with walnut butter, cinnamon and agave. With these yummy cakes feeling wonderful in my belly, I’m off to the new gas station that just opened by my school because they are giving away FREE COFFEE for the entire month of March. Happy Tuesday to me!

pancakes are SO easy to make ahead and freeze…if only i had known that years ago. they make such a yummy, decadent breakfast mid-week when you normally “don’t have time” to make those things.

I have never tried freezing pancakes/waffles. I must be missing out!
We had waffles this weekend and were just having the discussion about how we NEVER eat leftover pancakes or waffles. Maybe next time I’ll freeze them and heat them up again and no one will notice!

I never would have thought to freeze pancakes! The main reason I rarely make them is because I can only eat a couple at a time. SUCH a good idea!!
