This morning, I awoke from a dream in which I was stuck. I couldn’t move or talk, and my mouth was FULL of sand. Ick. I popped out of bed, laced up my running shoes, and went for a four mile fun to shake that stuck feeling. I hate that dream. Upon returning, I had some shredded wheat yumminess.

- Handful of shredded wheat
- Peanut Butter Sauce (mix of almond milk + a spoonful of peanut butter)
- Raw trail mix
- Pepitas
- Crumbled yogurt covered pretzel
After tackling a few more chores on my to-do list, I went to lunch with a former mom in my class (Hi Tona!) – and promptly forgot my camera. Whoopsies! I had broccoli and chicken, here’s a stand in.

Then I took Punky for a nice long walk in the sunshine and WIND. After returning home, I cleaned and organized for the rest of the afternoon. As I walked into the kitchen to start prepping dinner, I looked out the window and discovered a surprise blizzard was raging outside!

I had no idea it was supposed to snow today! Yuck! It is still snowing like crazy right now, and schools across the state are already shutting down. Too bad I’m already on break…hah. What a waste of a snow storm.
Dinner was a recipe out of Everyday Food – Ham and Spinach Casserole

Spinach, milk, egg, gruyère cheese, onion, garlic, ham

This was Meeker’s plate. I had a few bites of his – then moved on to my real dinner…

Roasted sweet potato and hummus. Yum city.
I’m off to snuggle under a blanket and try to stay warm as the snow continues on. I hope your first week of spring is feeling more springy! (Send some sunshine my way!)

ooo your casserole looks amazing!
ahh sry bout all the snow girl! sending sunshine your way!
Spinach…have to show that to Graci. Thanks for coming today…we enjoyed it! What a storm huh? Snow, thunder and light shows over here!! Wild? Enjoy the leftovers…..

Do you always make Meeker a seperate meal or do you eat what you cook sometimes too? I am getting married in July and was just wondering how you balance.
Thanks for your comment! I usually try to make meals that we’ll both eat, but occasionally I’ll do two different things. I just wasn’t feeling that cheesy dish last night…it is certainly easier to make ONE dinner.
I’ll trade you any day! My dad is snowed in, 3ft so far in Conifer! I think his power must be out now too since i can’t get a hold of him… I have to try this SP and Hummus thing, it looks freakin’ awesome and there is no way i wouldn’t like it!
That casserole looks pretty simple and easy to make! I might try it!
Oh that casserole looks awesome! And gluten free too!! I’ll have to try sweet taters and hummus sometime!!
We are having some warnings for snow here…I will die!
Ahhh…I hope the sun comes out soon for you!! I can’t wait for spring and warmth.
NO better way to end the day but having a sweet potato
Snow?! UGH! I am so sorry!!! I have a billiant idea…MOVE TO TEXAS!!! I will take you (and Meeker) in!
Ewwww…. that snow thing happened to me last week! I went to bed after a 64-degree day. I woke up with over an inch of snow on the ground and it continued the rest of the day! Lame!
Hopefully it won’t stick around long…
That’s insane that it’s snowing again! But, the surprise blizzard looks pretty.
I hope Spring gets it’s butt to Colorado soon for you.
I can’t believe you got snow! At this time, that seems crazy
I can’t believe it’s still snowing in spring! We got some on Monday…insane!
Sweet potatoes + hummus = major yum!
I wish you could see what it’s like where I live- the daffodils and tulips are up right now- full on spring. It’s crazy seeing snow! Good for you getting out in it!
Gotta love Colorado in March. (insert sarcasm…)
Love sweet potatoes with hummus – avocado is good too.
Enjoy the non-snow day!
I HATE stuck/paralized dreams!
But I LOVE EDF mag! I hope you can make the best of you blizzard.
I do NOT envy you for that snow. I’m soooo ready for warm weather!
Ham and spinach casserole looks delish! Snow does not! I am so over snow. Spring only from now on, please.
EW for the snow. I’m so glad that’s over with and Spring has arrived here!!! At least I hope it’s gone for good
Ahh, quit rubbing it in!!
I heard about that snow this morning and thought of you, stay safe and warm!! And I love the idea of adding hummus to your sweet tater…must try that! Happy hump day
Aww thanks! I’d love to be a faster cheetah
hah and I didn’t mean to rub it in! I bet we’ll get snow soon because of it!
What an awful dream!!
That casserole sounds awesome though.
it keeps snowing here, too! casserole looks incredible. think spring-y thoughts!
Snow in March should be illegal in my opinion.
I hate dreams like that–good that you got that freeing run in!
Mmmm the casserole looks amazing–I’ve been looking for one to make!
That ham and spinach casserole looks absolutely awesome. Thanks for posting it, I’m adding it to my recipe book.
