Cleaning and Baking

True to my word, I spent the day vacuuming, sweeping, dusting and baking. Before the baked goods came a real lunch.

Tuna salad on the left & cabbage, carrots, salsa, and avocado on the right.

Then it was on to the baking. First up were Mama Pea’s Vegan Energy Bars


Next up was a batch of these Date Muffins


And finally, some Raw Cookies


Add all ingredients into the food processor and blend until smooth. Then form into 1 inch balls and refrigerate until set.

I had a little sampler plate to test out the goodies.

Everything was delicious! The raw cookies were actually a little too sweet for me, and I think I will decrease the baking NuNaturals next time…it’s powerful stuff! But, I’m excited to keep experimenting.

    You can use the baking blend in just about anything instead of sugar. I used it for my banana bread(foodmakesfunfuel.com/banana-goodness-bread/) and it was perfect!

    I can especially appreciate that your husband liked the muffins. I know that when my hubby likes something that means it must be really good. It isn’t often I get compliments from him!

    Good job on the baking. I havent baked in like 6 months. I gotta keep the sweets outta the house. I know I will eat every last muffin/cookie I bake.

    I have NuNaturals too but I dont bake with it. I add it to oats and yogurt and stuff. I LOVE this brand of stevia. Its the only one that is purely sweet, no after taste or anything!

    YES PLEASE. i will take one of each. mama pea’s almond joy bars are also fabulous. i am trying to find more ideas of what to do with my liquid stevia – let me know if you have any idea lady!
