Recess Wildflowers

My alarm went off at 4:28 this morning, and I crawled out of bed, intent on squeezing in another speed workout before school. I ate a banana, drank a ton of water, read my Bible, and then headed out the door around 5:10.

2 mile warm up

1600m @ 7:30/mi pace

1200m @ 7:30/mi pace

800m @ 7:20/mi pace

1 mile cool down

Kicked. My. Butt. This was 10 times more difficult than it was last Saturday. I think a few factors contributed to this: (a) My last run was only 10 hours before (b) 25 mph winds (c) not much sleep. I was so dang proud of myself for finishing at my desired times that I rewarded myself with some yummy breakfast (okay, I was going to have a yummy breakfast anyway).

Into the food processor went:

  • 1 cup frozen strawberries
  • 1 cup frozen spinach
  • ½ cup frozen blueberries
  • 2 scoops protein powder
  • ½ cup almond milk

Then I whirred it together for about 3 minutes (making sure that plenty of air was incorporated)…ice creamy heaven. Then on the way to work I further rewarded my hard work with a latte.

Mmmm. This, plus the fruity/protieny ice cream kept me full all morning. When lunchtime rolled around I had a new bar and some leftover jicama + cucumber with lemon juice.

I heart you Bumble Bar. I had never had one of these before and it was unbelievable. I want more.

Then I had a snack when my kids went to music.

Tofu salad (tofu + mustard + Tony Chachere on toast

When I got home, it was time for another snack.

Plain yogurt + crumbled vegan energy bar

This snack fueled me through dinner fixin’ – Eggplant Parmesan. First I dunked the eggplant slices in (1) whole wheat flour (2) egg + water (3) Parmesan cheese + panko breadcrumbs and then baked for 20 minutes at 400*

Then I put them in a casserole dish, topped with diced tomatoes + seasoning (mixed beforehand and simmered).

Then sprinkled with mozzarella cheese and broiled to perfection.


For dessert, I had sparkling water and POM juice.

Punky really wanted in on the action (don’t worry; she only licked the outside of the glass).

In the 3rd grade world…

A couple of girls in my class picked these for me at recess and made my heart smile.

    I love your non fried version of eggplant parm! My husband hates eggplant so it’s a dish I never make, so if I ever get it it’s at a restaurant and not quite as healthy as yours!

    Do you mind sharing your recipe for it? Do you use greek yogurt in it?

      2 about half a cup of tofu mashed and just a tablespoon of mustard and some creole seasoning…you could probably do more, but I make it easy on myself!

    I just saw that you’re driving a Dodge..what kind is it? I drive a Dodge Avenger which is a really rare car here in Germany. But then pretty much all the Dodges are rare occurances.

  12. Can we live together? I want to wake up at 4:28am and do speed workouts with you…you have so much motivation to do that. I don’t think I ever could.

    I want everything you ate today. The yogurt mess, the tofu scramble (which I swore was scrambled eggs! looks so yummy!) and that ICE CREEAAAMMMY deliciousness.

    That’s good to know about the Bumble Bar…I’ve been really curious about those guys. I’ll have to try to remember to pick them up next grocery trip.

  15. I’ve seen those Bumble Bars on blogs, but haven’t ran across any yet. Are they a Whole Foods thing? I may have to desert TJ’s for one week to go browsing elsewhere… oh dear!

      I got the Bumble Bar at a grocery store called Sprouts here in Colorado. I think a lot of health food stores have them I bet Whole Foods carries them too…

    I used to bring only my most favorite teachers weeds, I mean flowers, after recess. It looks like your students really like you!

    I hope you know you should be pretty proud of yourself for those times… and knockin’ a crazy workout down at five o’ clock in the morning! Not a lot of people have that much motivation, but i think it is so cool that you seem to thrive off of the challenge :) That Punky pic is so cute. Has he tried Pom juice? Who knows, he might like it! By the way, one of my favorite mixes of all time is tofu and mustard, i thought i was the only one who enjoyed it because i was weird, but now i know i am in good company! :) Eggplant looks incredibly satisfying, have you used up all of your nutritional yeast yet? What was the final verdict?

    I keep wanting to try a Bumble Bar. I see them all the time but I never buy any. Maybe on Saturday when Im at the grocery store I’ll pick one up!!

  20. That’s looked like the best breakfast ever and what AMAZING looking eggplant, I have never made it but I should……………however I know my husband & daughter won’t eat it. =(

    I keep seeing Bumble Bars but am afraid to try them since I haven’t heard much about them. Now that I know they’re good, I’ll have to buy some!!

    I remember picking flowers for teachers as a kid. So cute, you definitely deserve it :) Hope you’re having a great hump day!!

    I’m kicking myself for not running this morning, but I ran late yesterday and my legs feel like lead stumps. I should have tried because I felt like a slacker all day long.

    I have a whole basket of those little flowers at school. I love it when the “clover flowers” start popping up because the kids go crazy over them.
