I started the day with a nice 3.5 mile run, and left the house feeling great, however, the rest of the day, I felt completely zapped of energy. I wanted to crawl into bed at 6:30 when I got home, but instead I went for a walk – which seemed to help a bit. I’ll make this quick because my pillow is still callin’ my name in a major way.
Breakfast

One egg, 2 egg whites, spinach, toast, coffee…cat tail in the background. (How gross is it that my cat is sitting on the table during breakfast? Gross, I know.)
Lunch

Sweet potato, 3 bean salad: kidney, chickpeas, white beans, celery, onion, vinegar, evoo
Snack


Still workin’ through my Bumble Bar samples (thanks Liz!) this one was a winner! Love that chocolate + seed combo. The apple was stellar too – perfect crunch.
Dinner

This simmered in the crock pot all day: 1 sweet potato, 2 ribs of celery, 1 red onion, 2 slices of bacon (cooked first), 8 cups water. Then I added some milk for creaminess and some nutritional yeast. It was pretty good, not awesome.
Dessert

Delicious. ½ cup cottage cheese, pepitas, raw cookie – crumbled
In the 3rd grade world…
A little boy in my class lost a tooth today. Literally. He pulled it out in the morning during math, put it in a little box, stuck the box in his pocket and was – no doubt – playing with it for the remained of the day. It fell out of his hand mid-afternoon and he was devastated. I had most of the class on hands and knees scouring the dirty carpet for a lost canine. I couldn’t stop laughing at the thought of a LOST tooth. Made my day.

This countdown is hanging loud and proud in our office. Summer cannot get here quickly enough!


Lost teeth – I miss those days! I seemed to have quite a few of those incidents last year, so I started taking pictures if they came out in class – we posted the pictures on a window that the kids started calling “the wall of blood” because they were all (5 of them) pics of little bloody mouths! I don’t really get any excitement of that type in jr. high
Oh my gosh, that picture thing is the BEST idea!! I am definitely going to do it next year!

I remember the office at my elementary school had little tooth shaped necklaces that you could put your lost teeth in. I always felt so cool when I got to wear one.
Totally random fact – my grandpa still has one of his baby teeth. In his mouth. The dentist said if it didnt bother him there was no need to pull it, and it never fell out. He’s 89.
We never found it! Maybe I should leave a quarter in his desk and tell him the tooth fairy came to the classroom.

Lol on the lost tooth! The nurse at my school gives kids “tooth necklaces” that they can put their teeth into. But of course, they play with it…and they have definitely lost it. Luckily in Kindergarten I can trick them into thinking this is a great thing by being like, “you lost your tooth?! AWESOME! You know thats good luck right?”

Okay, that pizza yesterday looked so amazing, i had to make it last night… Well, attempt to. It did NOT turn out at all like your pics, but i was happy with the taste, that is for sure! You honestly need to make a cookbook full of all of your splendid creations… I would even go as far as saying that it would be a best seller. Bumble bars? I don’t think i have ever tried one… They look like my kind of treat, are they big? And don’t you love countdowns? They add so much fun to what could otherwise be some very dreary months/weeks!
I’ve been freakishly tired this week for some reason. NO idea why. I hope you’re more rested today!
Anyone who has a cat knows that there’s no use trying to keep them off the tables, so I don’t think it’s that gross. I don’t have one currently, but I know how it is.

My cats love to sleep on the kitchen table. We’ve tried to keep them off and failed, so now we just make sure to wipe it down before eating there. They run the show.

Yay for almost summer! Unfortunately culinary school is year round, and my summer break isn’t until july. BUT my mom works at a middle school so I totally know where you’re coming from with the count down! Hooray!
