Trying for Eight

Hello! I hope you all had great weekends! Even though it was cold, it felt like a little taste of summer. I started this morning with a trip to the gym to try one of Janetha’s HIIT workouts. It kicked completely kicked my butt. When I came home, I had some protein ice cream to refuel.

Look at that purple! In the food processor I put:

  • ½ cup blackberries
  • 1 cup frozen banana chunks
  • 1 cup frozen spinach
  • 1 scoop protein powder

It’s so easy and so yummy. There is no better food after a tough workout! Seriously, try it. Then we went to church and to lunch with Meeker’s family. Any place with a salad bar always gets my vote, and we ended up at Sweet Tomatoes, I love any place where you can make a 3 lb. salad.

I also had some cottage cheese and whip cream mixed together. My husband/in-laws thought it was really disgusting, but I loved it. When we got home, I crashed and took a long nap. I usually hate naps because I don’t like waking up and feeling groggy, but this one felt nice. I woke up refreshed and was able to complete some grading, cleaning and a trip to the grocery store. I had a little snack before I went to prevent any impulse purchases.

After all the groceries were put away, I made Meek and I some omelets for din din.

2 eggs, spinach, hummus, 1 slice prosciutto, toast.

And in an effort to keep my head above water during the last 3 weeks of school (it gets a little craaaaazy), I have made it a goal to get 8 hours of sleep for the next week. I usually get about 6.5, but I thought I would try it out and see how I feel. If I feel great, I’ll try to keep it up. But my guess is that I won’t really notice…I’ve never been much of a sleeper. However, that means I must go to bed at 8:30, which seems a little ridiculous, but I’m giving it a shot.

Alrighty, I’ve got a big field trip to the Denver Zoo tomorrow, so I have 15 minutes to pack my lunch and get into be! 1, 2, 3…go!

  1. I always loved the zoo as a field trip, I still love going to the zoo even when I am older. Have fun!!

    I try to get 8 hours of sleep a night, but it usually is more like 7. My perfect amount is 7.5, if I get more than 8, it usually has the same effect as if I’d gotten 6. Funny how all that works!

    And good luck with the sleeping – YOU CAN DO IT! I’m making that my goal this week too because last week I sucked with it and it KILLED me!

    That protein ice cream looks amazing – but you outdid it with your yogurt mess! I HAVE to make those flourless chocolate fudge cookies ASAP. I drool every time I see them on here.

    And guess what!? I USED FAGE LAST NIGHT!! I made a cucumber dill yogurt sauce and I used Fage for it and LOVED it! I may be a convert :)

  3. this is the second day in a row I heard of this sweet tomatoes place!?! April (from foods of april) went there too!! where is this place and why aren’t there any in boston?!?!?! looks SO good! i love 3 lb salads :)

  6. Damn I wish we had a Sweet Tomatoes! looks like heaven on a plate.
    Good luck getting the sleep; I definitely need more to function, which makes me go to bed early, but without it Id be cranky so I figure its worth it.

  7. Pretty sure i have topped 3lbs before at Sweet Tomatoes… Step it up. ;) And i miss the Denver Zoo. My Sister and I used to go every Summer at least once… Fun Fact: We were lucky enough to go on the day of Klondike and Snow’s birth and see them in the incubators… It was so neat! Btw, that little glass of cookie makes me want sunflower seeds…
