Still Hungry

Aaaand I only have 2 more Mondays left this year. What a sweet, sweet thing. This Monday started with a run con el perro, a green monster, and a walk to school.

Frozen spinach (2 cups), blueberries, banana, protein powder, water

I had an apple during reading class (I totally talked with my mouth full), and then lunchtime was here before I knew it.

Overnight oats – inspired by Holly.
Last night I combined: ½ cup oats, ½ cup greek yogurt, ¼ cup cottage cheese, 1 tsp. chia seeds, loads of cinnamon. Today I buried a little triangle of Toblerone (gift from a kiddo) and surrounded it by a handful of almonds. Yummmmy.

However, oats have way of spiking my metabolism and, without fail, I’m hungry 2 minutes after consumption. A couple hours later I was feeling famished, so I dug into the staff fridge. Luckily, we had some leftovers from a Cinco de Mayo lunch, so I had some salad and rice. Random, but put an end the gnawing hunger pangs.

This was taken on the floor, behind my desk because my kids were in the room with the Spanish teacher.

During my second job in the office after school, I had a Luna.

Pretty good…still starving afterward. Bars never really cut it for me, I don’t know why I bother. Oh wait, now I remember, they’re really easy to pack the night before.

After my walk home, I was…you guessed it…starving. I made this dinner in 20 minutes flat.


Grilled chicken, steamed green beans with hummus, sweet potato fries (leftover from a restaurant this weekend). It was summery perfection. I love grilling!!

In the 3rd grade world…

During snacktime, I noticed one of my students eating a banana like this:


One side of the banana peel removed, and then scooped out with a spoon! How cool is that? I begged her to take a picture, and she was happy to indulge her food-obsessed teacher. My ex-Chinese student saw my taking this photo and promptly yelled “I invented that!!!”…I told her I would give her credit on my “food website”.

  1. Novel trick with the banana! Kids are so cute in that respect.
    I have always been tempted to have yogurt for lunch, but I know that I would be famished after just like you were. Oh well, I don’t mind having it for breakfast every morning. I am so jealous that you are able to walk to work! What a terrific way to start/end the day.

  2. I think my hunger bug was catching, sorry you were hungry all day, I hate that feeling! But only two more Mondays? You must be floating!

    I’ve been starving lately too – I make it like 2 hours before needing to eat again. It’s so annoying! Haha.

    I’m so excited you only have 2 more Mondays left. YAAAAY!

    Also? I almost had that exact same dinner only with asparagus and not green beans. But then I lazed out and microwaved a chicken sausage. Hahah.

  4. That’s fantastic (Banana)! Actually -here’s something you may enjoy (seeing you enjoy chocolate, bananas, and peanut butter… all WONDERFULLY addictive flavors):

    Cut a slit in an unpeeled banana, stuff with chocolate and a dribble of peanut butter, and either grill or bake for about 10 minutes… it’s all gooey mess o’ goodness!

    lunas dont do much to curb my hunger either. larabars and prana bars are really th only ones that do it for me

  6. Oh my god- your kids are hilarious!

    My ex boyfriend used to take the whole banana from the peel and maul it while eating it- I always thought it was gross- this kid is onto something though.. !

  7. I love that banana picture! It reminds me of that Seinfeld episode where they see a guy eating a Snickers with a knife and fork.

    Your issue with oatmeal is so strange to me, my bowls usually last me 5-6 hours. Guess not everyone works the same way. :)

  8. I have never in my life seen someone eat a banana like that but it’s cute!

    I am so excited to be in the final THREE weeks! This year has been killer! Then again, I think I say that every year…

I would have done the same thing, but probably would have been caught in the action… You are one dedicated blogger :) I can’t wait until i check my inbox and see that you have run a 13:?? 2 miler without even trying! :)

  10. haha I enjoy so much reading stories about your students. I’ll miss them during your Summer break. But I know you deserve a break bad. When I was a dance teacher I also didn’t teach during the Summer or any school holidays. I literally counted down the days come May.
