I’m so spent. The end of the year is physically and emotionally exhausting. I of course am beyond grateful for the break, but it’s hard to fathom that another school year has passed, and the little ones with which I have spent 8 hours a day for 10 months are no longer under my care. I’ve poured my heart and soul into their well-being, and now I pass them along. In two months I will welcome a new bunch of kiddos and start all over, but for now…I have two months to just be Katie, and not Mrs. Unger.
What did I eat today? Smoothie, coffee, veggies, hummus…pretty standard. However, my dinner was anything but ordinary.

Inside this pressed sandwich:
- Black beans
- Mustard
- Hummus
- Broccoli slaw
- Sautéed zucchini
- Caramelized onions
- Turkey slices
- Tomato paste
It was so good that I’m contemplating making another one in about 5 minutes. Today was a hungry day…I had to chase an escaped newt around the classroom; it really revved up my appetite. I was terrified of the little bugger, and I sort of felt like The Trunchbull in Matilda. But in the end, I safely returned the little guy to his home.
And now, it’s pretty much summertime!! I do have to go to work tomorrow, but it’s just to wrap up some loose ends and get my classroom settled for the summer.
I hope you all have great evenings, thanks for all your happy summer wishes today…I like you all. A lot.

Knowing there are sweet teachers like you out there really makes me smile.
I really remember and appreciate all of the ones who went above and beyond in the classroom. I’m sure your kiddos will look back and love the time the spent under your care!
PS Hang in there! Hope you have a relaxing summer.
It’s definitely a bittersweet end. I only have mine for 4 hours a day at our afterschool program, but when I recently got moved to a new worksite, it damn near killed me having to adjust to not being with my little ones. They may have been monsters, but they were MY monsters. I love your Matilda reference BTW…you can always tell the teacher from their neverending references to kiddo shows!
girl you rock for your dedication to those kids! i respect you so much!
A summer well-earned. I have to go to work tomorrow. AIYEEE, why didn’t I become a teacher! I’m sure, too, that next year there will be some 4th graders seeking out Ms. Unger because of their good experiences.
Oh my god that sandwich! Also, you’re freeeee, yay!
Yay for summer vacation! It seems like you guys are out so early, but my international school goes all the way until the 25th of June. Yikes! Fortunately I don’t work a full week so my days are numbered as well!
Please come over and make me that sandwich for dinner!
I am glad your summer vacation is officially here! I totally admire you for what you do! I can’t imagine how hard it would be for me to pass those kiddos on….
Enjoy every minute of your summer vacation!!
We as teachers NEED that time to recharge and mentally prepare for the next year. So many people think we’re so “lucky” to have summers off and I guess we are, but what they don’t realize is that our time off is necessary… and unpaid!!!!!
Happy summer Katie! That sandwich just got put on my “To be made” list – sounds amazing!
I LOVED Matilda!! That was one of my favvvvoorite Roald Dahl books of all time!
I’m SO happy (and VERY jealous) that you have the next two months to relax…but you way deserve it. I know being a teacher is no easy job!
I hope you sleep in today and just have the LAZIEST day ever! If you’re anything like me, that won’t happen – but I still hope it for you!
Congrats on a successful year and YAYYYY FOR SUMMER!!!
Congrats on being done lady. You are a great influence on those kiddos, and they’ll be better little people because of you
The newt thing is VERY Matilda!
Congrats on being done! It must be a bittersweet feeling. I hope you enjoy your time off!
I look back with absolutely NO regret for reading that book at least 9 times. The movie is pretty fun as well, such a great story. You deserve a splendiforous summer and nothing else. Play with Punky, shoot some guns, walk a lot, run, and keep shoveling out ridiculous recipes that make me love your blog more and more every day; even if my wallet hates you…
That sandwich needs to be in front of me, and not on a computer screen- it looks insane!
Take a deep breath and enjoy your break! You’ll be back to being Mrs. Unger again in no time
That sandwhich and I need to meet, I’m certain we will be good friends. Hope your last day of work went well!
OMG. Sandwich. Epic.
And yayyyyyy for the end of the school year, and for referencing the movie Matilda. Those kiddos are so lucky to have you!
hugs and love girl!
That sandwich looks AMAZING!!
I cant believe your school year is over. It feels so early to me. Im pretty sure we were never out until the end of June.
at first i thought that was just half a sandwich and i was like “damn girl, that junk is stacked!”
All I can say about your sandwich is WOW! That is amazing!
Congrats on being done with your school year…I always think it’s so hard to say good-bye to the kids, but I know I’ll have another great group in just a few short months!
That is so many veggies into one sandwich! Wow! I actually have to limit the variety of veggies in a sandwich just cause they get so stuffed.
that sandwich looks so good! and yay for summer =)
