Thank you all so much for the fantastic book recommendations! I have more than enough to last me through the summer…so excited. If you are looking for something good to read, hit up the comments section of this post. You all are awesome.
Here are some highlights from the past 24 hours…first, the FIL’s birthday dinner last night.

Bison burger topped with ketchup, mustard, avocado, baby bell peppers (Janetha, I think of you every time I eat these!) and a massive amount of salad.
This morning I went to a sweaty spin class…good exercise is always a highlight.
I followed it with some nuts and prunes.

Yup, I love prunes. I’m eighty. I also had a cranberry sparkling water (in the background).

Pineapple Paradise: mango, coconut, pineapple, honey
The laziest cats on the planet:

Stuffed Peppers:

Green bell peppers, brown rice, canned tomatoes, spinach, onions, garlic, buffalo sausage – 2 topped with melty cheese, 2 plain
Roasted Sweet Potatoes:

Too funny, I just took pictures of my two cats lazing around. They have the life, don’t they? Prunes are the best…I don’t care if I get made fun of, they’re still delicious
I used to make stuffed peppers all of the time, and have since completely forgot about them. Thanks for the reminder!
(p.s. your cats are adorable!

LOVE “Stuffed Green Peppers”!!! =) I use lean ground meat in mine with brown rice, stewed tomoatoes, onions, garlic, cheese of course and then a little tomato soup for sweetness……YUM! Think I will mix in “spinach” next time for an added veggie. LOVE the baked sweet potatoes, going to have to try that.
Haha your cats are too funny.
