How to…

Build the perfect taco salad!

Start with a bed of lettuce, and then pile on the toppings…

My personal favorites include homegrown tomatoes

green onions, CILANTRO (my fave), red peppers…

Homemade guacamole is a must

and the best salsa in the world doesn’t hurt.

Add some sort of protein, and then pile it high…

I like ground turkey, but if you don’t do the meat thing…beans are yummy, too. Add some broken tortilla chips (for crisp!) and a spoonful of roasted red pepper hummus (mmm…creamy). The key is layers. Crispy, crunchy, smooth and fresh.

What is your favorite taco salad topping?

  1. I’m the only one who likes cilantro or guac. in my family, but I do ever-so like them. The one topping I hate to do without: tomato.

  2. salsa and guac for sure. some nooch/hummus sauce that tastes just like cheese is REALLY good too. i also add in a sprinkle of chili mix (like the mccormick chili seasoning). it’s a winner!!

  3. I love tomatoes. Weird…but whenever I get any kind of Mexican food…tacos, enchiladas, fajitas, taco salad, etc…I need TONS and TONS of diced tomatoes. It completely grosses Keith out because he HATES tomatoes! hehe!

  4. KATTTTTTIIEE!! It’s been forever. This week has been SO incredibly nuts for me – but I couldn’t resist dropping in and letting you know I read you every morning on my google reader :D

Your nieces and nephew are SO adorable and you just seem like the absolute best aunt. I got all warm and cozy thinking of you guys coloring together and making pizzas!

Also, that taco salad looks amazing and it really makes me want to go home and make one tonight except I have no lettuce!! It’s a travesty, I know.

Anyway, I’m glad you’re enjoying summer!!

Have another wonderful day today for me k?? :D

  5. Homegrown tomatoes are so much better than the ones at the store. At some point I started adding cucumbers to taco salads and now I’m hooked.
