Rollin’

After spending the morning at the gym, and the afternoon at the pool, I came home to make spring rolls for dinner!


The first go-around with the rice paper was a major fail. The directions said to soak the rice paper wrappers TOGETHER to in boiling water for 15 minutes. Overkill. I checked on the soaking papers after about 5 minutes and they had already turned into a bowl of mush. So, I threw those out, and decided to soak the next batch individually in warm water. After about 30 seconds – they were the perfect texture to work with…

Zucchini, carrots, avocado, and basil

Rollin’…

Done!

Not perfect, but they stayed together, and they were scrumptious!


Served with a peanut dipping sauce:

  • ¼ cup peanut butter
  • 1 tbs. soy sauce
  • Juice of one lime
  • A few splashes of water

Make these! The whole process only took about 20 minutes (and that includes the silly rice paper catastrophe). So summery and yummery. Yes, yummery.

  1. My last cooking disaster was father’s day making chocolate covered nut butter balls, which didn’t work so I tried to make peanut butter bark, which never set so now we have milk chocolate peanut butter which I don’t like but I’m pushing on my dad to eat.

  2. Yep, definitely tried to make my own ravioli with wonton wrappers once and lets just say it wasn’t even edible… major FAIL!

    Your spring rolls look fantastic though, I am especially loving the peanut dipping sauce.

  3. Those look so good! How did you do the wrapping? I bought some rice paper last week and I’ve been meaning to try to make some ever since but I’m so intimidated!

    • I was totally intimidated, too! Especially after the fail…but it was surprisingly EASY! I wrapped it just like a burrito…

      Put the fillings on the bottom 3rd of the rice paper (leaving about a 1.5 inch border) Fold the bottom of the paper tightly over the fillings Roll over once or twice, then tuck in the sides and finish rolling

  4. I have had many baking disasters….the most recent of which being a brick-dense banana bread that I tried to create from scratch. It was the nastiest thing I’ve seen in quite some time. Lol. I’ve also had many occasions of burning lentils and things of that nature. :)

    Those spring rolls look amazing! I want to go try to make some this weekend. They look so fresh and yummy.

    It seems weird that the package would direct you to soak them for 15mins…good thing you took matters into your own hands.

    Recently, I had a fire in my microwave while making popcorn. Yeah, that was the biggest one :) )

  7. Those rolls look so good! I made a penaut satay sauce the other day, i just posted the recipe! It’s basically the same as yours but add sweet chilli sauce, gives it a gorgeous kick!

  8. When I first got married, I followed a new chicken pot pie recipe… and found out that there was a missprint. There’s no way that there could be two cups of milk in such a little chicken pot pie. It came out like a milky soup, and my husband came home to a wife who was putting on her jacket. Because I was on my way to the store to buy a frozen pot pie. Ugh, I was so mad. Ha, ha. Your spring rolls look super yummy by the way!!

  11. Oh, those look really good! I actually just soak my rice papers in warm water for a little bit…it doesn’t take much time for them to loosen up. I can’t believe the packaging said to soak them for 15 minutes in BOILING water!

    I think my worst disaster in the kitchen was fairly recently, when I tried making bread and killed the yeast by adding water that was too hot. I didn’t realize the dough had formed a very tough rock as the KitchenAid was kneading it, and occupied myself with other tasks for several minutes before looking over and noticing that the KitchenAid was SMOKING. It just couldn’t knead that unrisen piece of stone and overextended its power source trying.

    (It seems to be over it, though. It works again!)

  12. ooooh love love love spring rolls. i need to make a good sauce though. i have the rolling down…now the peanut sauce…thanks for the recipe. at the restaurant I add sriracha to my sauce so I’ll prob do that too.

    I tried to make “spaghetti squash” cakes once. I baked them with leftover spaghetti squash. They didn’t stay together because there was nothing to bind it and I think they still had too much water in it. I was expecting something kind of crispy/chewy but it was just re-heated spaghetti squash in the oven with a SLIGHT crisp on the edges. Haha.
