Chia Mania

You all expressed so much interest in the chia seed pudding on Sunday, I thought I would show you exactly how I do it. Plus, I woke up craving it for breakfast, so it’s win-win situation.

First, get a hold of some chia seeds. (I get mine in the bulk bin at Sprouts)


Next, you need to get your liquid/flavoring things together, and put them in some sort of blender.

In mine:

  • ½ cup vanilla soy milk
  • ½ cup water
  • ¼ cup walnuts
  • 2 dates

Plus seasonings…

Just adjust it to your taste. I use a lot of cinnamon, a medium amount of ginger, and just a sprinkling of nutmeg.

Then blend the yummy liquidy mixture for a minute (or so)

Transfer to a bowl and add ¼ cup chia seeds


All that’s left to do after his is stir, stir, stir.


I stir mine about every 5 minutes. Don’t feel like you need to be constantly stirring this stuff – it’s pretty hard to mess up.

After about 15-20 minutes, it starts to look like pudding. Sometimes I add a bit more liquid if it’s firming up too much. (But like I said, it’s not a science; just keep tinkering with it until you like it). At this point, transfer it to a pretty glass, top with coconut, pour yourself some coffee and enjoy!

This is obviously a little more labor intensive than pouring a bowl of cereal for breakfast, but it is SO delicious. If you’re strapped for time in the morning, this can easily be done the night before and stashed in the fridge. And apparently, chia seeds are good for your bod, but I just like them because they taste so yummy, and they make my tummy full and happy. It’s slowly creeping up to the top of my favorite breakfasts – try it out and let me know what you think!

  2. I love chia pudding, but I’ve never, ever thought to blend up some walnuts & spices– trying this tomorrow!! Or maybe for lunch today…. ;)

    I’ve never tried chia seeds, for some reason they kind of freak me out. I think I need to buck up and try them. Like the majority of other things I thought I’d never try after seeing things on blogs and then tried them, I’m sure I’d love them!

    that is the weirdst thing I’ve ever seen. I’m curious, but to be honest, I’d totally eat it if someone else made it for me. I just dont see myself cooking first thing in the morning. and if i make anything the night before…i’ll eat it at 3am. I’m impatient like that.

    It sorta looks like those tapioca balls that Asians put in their bubble tea. I am not too sure if I would like the texture, but I should give it a try.

  19. That pudding looks like the ultimate healthy pudding!! I’ve been incorporating a lot more seeds into my diet so this would be perfect^^ You could even try adding cocoa powder for a chocolate pudding or even coconut! the flavor selection is endless… !!

    I do something similar. This stuff looks great though, maybe I’ll try it!! My version is 1-2 Tbsp chia seeds and 2 Tbsp raw cocoa powder and 1 Tbsp maple syrup. Stir together quick, allow to firm up (about 5 minutes) and enjoy!
