Now, if you’ll excuse me

Have you seen that episode of The Office where Jim and Pam get back from their honeymoon, and that have a personal joke where they keep using a silly voice to say ‘franks and beans’…?

Well, while I was cooking dinner tonight, I probably said that 15 times to myself because that’s exactly what we had.

I saw a version of this in my latest issue of Everyday with Rachel Ray, and adapted it to suit what was in our pantry.

Delicious.

Healthified Franks and Beans

  • ¾ pounds of dried pinto beans, soaked overnight
  • 4 cloves of garlic
  • Package of chicken hot dogs (I used Applegate Farms brand)
  • 1 tbs. chili powder
  • 1 tsp. cumin
  • 1 cup diced tomatoes in sauce
  • 2 tbs. tomato paste
  • ¼ cup water
  • evoo
  • salt

Add the garlic and soaked beans to a pot + 6 cups of water and boil for about 2 hours. Meanwhile, slice the chicken hot dogs and sauté them in a pan with the evoo. When they are brown and crispy, add the chili powder and cumin and cook for another minute. Next, combine the tomatoes, paste, and water, and add to the hot dogs. When the beans are done, season to taste with salt, combine with the hot dogs and enjoy!

Now, if you’ll excuse me, I need to go pack my bags because I’m leaving for Mexico in the morning!

    i was fully prepared to rave all about your chia pudding, dog park and lovely food posts, but i am way too excited about Mexico now. can’t wait to hear all about it – have a FABULOUS trip!!!
